Dee's Roast Pork for Tacos

OK, 5 stars for giving me a good idea for leftovers! I already had over 2 lbs of juicy lightly seasoned slow-cooker shredded pork leftover in the fridge when I can came across this recipe using green chilis and oregano. Bingo...Mexican night! I warmed the shredded pork in the crockpot with 8oz green chilis, some chicken broth to moisten and 2tsp cumin and 1tsp oregano (set on low 6 hrs). Added fresh cilantro before serving with warm tortillas and pico de gallo. Melt in your mouth delicious! I can't wait to try the original recipe as-is next time we do pork shoulder.

Best Black Beans

Rated 3 stars for recipe "as is" because using the canned liquid is yucky. But with the tweeks others suggested, I give 5 stars as an delicious way to do black beans. First I cooked diced onions in butter until caramelized, added lots of fresh garlic, seasoned with S/P, 1 tsp cumin, and 1Tblsp hot chili powder because that's what I had on hand. Then used chicken broth as liquid with the rinsed beans.... Brought to boil, simmered covered about 30 mins, then cooked uncovered til thickened. Dressed with fresh cilantro and squeeze of lime before serving. It was a hit with my friends and family for Mexican night.

The Best Sweet and Sour Meatballs

WOW...delicious sauce that made for a deliciously easy meal in the crock pot! I used 2 lbs frozen chicken teriyaki meatballs with pineapple (so good and easy), simmered the sauce ingredients on the stove for a few minutes to thicken, then combined all in crock pot on low 3-4 hrs. Sauce Tips: 3/4 cup brown sugar, 1/4 ketchup, 1/2 tsp ground mustard, salt and pepper. I also added 1/2 cup caramelized minced onions that really made it. Served with basmati rice

Savannah's Best Marinated Portobello Mushrooms

This recipe is SO so so good! It's become my go-to for perfect shrooms everytime, whether I finish them on the grill for meaty mushroom burgers, or use in a saute, or make baby bella stuffed mushrooms. I follow the recipe but use drinkable red wine and regular soy sauce. After the mushrooms cook, the cooking liquid/marinade is like liquid gold....it's delicious!

Garden Fresh Tomato Soup

This soup is wonderful and easy. It's a perfect 'end of summer season taste' with a hint of autumn from the bit of clove. It's just two of us, so I used one big can of San Marzano tomatoes and 2 cups of well-seasoned vegetable stock, blended with cooked sweet onions and garlic and real butter. Seasoned to taste with S&P and dash of ground clove. Delicious! My veggie boyfriend loved this with thick grilled cheese sandwich. Cozy...

Spiced Sweet Roasted Red Pepper Hummus

Yum! Rated 4 stars because this needs some olive oil or marinade liquid. I found nice jars of marinated roasted red peppers (with garlic cloves) at my local dollar store of all places. They are perfect for this recipe. I used some marinade from the red peppers while blending. I live in Phoenix and found Fresh n Easy neighborhood market is the place for Tahini... one $5.99 jar makes a lot of hummus.

Black Bean and Corn Quesadillas

This is a great combo of flavors, but the recipe is lacking in seasoning and (for me) heat. I used black beans cooked with garlic, onions, and chipotle peppers in adobo sauce. Added drained fire roasted tomatoes and used leftover grilled corn off the cob. Layered low fat jack cheese on multigrain tortillas with spicy bean mix and caramelized sweet onions. Served with 0% FAGE greek yogurt & fresh guacamole. It was surprisingly light, spicy and delicious! Perfect with a Corona and lime.

Slow Cooker French Onion Soup

I made this for the 2nd time last night. It's so easy and elegant! This time I used the crockpot to caramelize 3-4lbs sweet onion with 1/2 cup butter and tsp sea salt for six hours (on high)....Then added 4 cups good rich beef stock, thyme, red table wine and black pepper. Cooked on low for another 6 hrs. Cooking down the onions first in the crock made this so buttery and delicious. Top with toasted baguette with melted swiss.

Tofu and Cheese Stuffed Shells

these shells are delicious. for the tofu ricotta mixture i used half cup each zucchini and carrot sauted with garlic, and also sauted spinach. topped with good 5 cheese jar sauce.. rave reviews from veggie boyfriend

Breta's 7 Layer Dip

Even by halving this recipe it makes a large amount. i missed the taco seasoning that we usually put in the beans, and the bean dip was expensive. I'll make my regular guacamole with lime and salt next time too, with 3 avocados

Honey Glazed Ham

I followed this recipe EXACTLY for my 10lb spiral sliced Christmas ham. My boyfriend and I were both disappointed! I wish I had kept it covered, and followed the directions that came with the ham itself (oven 275). It seemed 325 for the time indicated left it a bit dry, even basting every 15 minutes. It's not a total loss but I expected it to be perfectly delicious. Not so..

Roast Sticky Chicken-Rotisserie Style

I used this spice rub on my holiday turkey breast and it was delicious! Rubbed it all over and under the skin the night before cooking, then rubbed some soft butter in before roasting at 325. YUM

Easy Corn Pudding

Made this for first time yesterday for Thanksgiving. Used 2 eggs, 2 T splenda, light sour cream, and undrained corn. Very good!It's delicious cold for breakfast too. YUM. Next time I'll try it using nonfat greek yogurt in place of sour cream, and only one large egg, to make it healthier.

Meatball Nirvana

Nothing special here. I did not care for the overpowering taste of Italian seasoning in these meatballs. For me, that ruined the lovely marinara sauce too. Also 1 1/2 inch meatballs needed less than 20 mins.

Apple and Spice Pork Roast

This was SO GOOD. I cooked in crockpot on low. Doubled the sauce and rubbed flour mixture on pork and seared nicely before i put it in the crockpot. Served with hot german potato salad III for Octoberfest. Wow!
