Dee's Roast Pork for Tacos
OK, 5 stars for giving me a good idea for leftovers! I already had over 2 lbs of juicy lightly seasoned slow-cooker shredded pork leftover in the fridge when I can came across this recipe using green chilis and oregano. Bingo...Mexican night! I warmed the shredded pork in the crockpot with 8oz green chilis, some chicken broth to moisten and 2tsp cumin and 1tsp oregano (set on low 6 hrs). Added fresh cilantro before serving with warm tortillas and pico de gallo. Melt in your mouth delicious! I can't wait to try the original recipe as-is next time we do pork shoulder.

Best Black Beans
Rated 3 stars for recipe "as is" because using the canned liquid is yucky. But with the tweeks others suggested, I give 5 stars as an delicious way to do black beans. First I cooked diced onions in butter until caramelized, added lots of fresh garlic, seasoned with S/P, 1 tsp cumin, and 1Tblsp hot chili powder because that's what I had on hand. Then used chicken broth as liquid with the rinsed beans.... Brought to boil, simmered covered about 30 mins, then cooked uncovered til thickened. Dressed with fresh cilantro and squeeze of lime before serving. It was a hit with my friends and family for Mexican night.

The Best Sweet and Sour Meatballs
WOW...delicious sauce that made for a deliciously easy meal in the crock pot! I used 2 lbs frozen chicken teriyaki meatballs with pineapple (so good and easy), simmered the sauce ingredients on the stove for a few minutes to thicken, then combined all in crock pot on low 3-4 hrs. Sauce Tips: 3/4 cup brown sugar, 1/4 ketchup, 1/2 tsp ground mustard, salt and pepper. I also added 1/2 cup caramelized minced onions that really made it. Served with basmati rice
