This is now in permanent rotation in our house. had a bag of frozen miripoux so i used that in place of the initial veggies, toasted the quinoa. I followed other reviewers suggestion and added 1 t cumin. I went light on the turmeric. I also added peas and will likely add additional various veggies.

Roasted Squash Soup

I choose this recipe for my very first experience cooking with squash. A sweet soup, not spicy. I used an ice cream scoop to take out the innards, that was simple. wondering how necessary pureeing broth was, but it was nice to 'cleanout' blender, a tip mentioned in another review here. I subbed vermouth for sherry, a roasted yam for the spagetti squash. When i taste it it feels like something is missing, very good...it just needs something...

Green Chili Burritos

This recipe will go into regular rotation for dinner. I also used a crockpot while we went about our day and left out the starch, more than doubled the cumin, went heavy on the pepper and light on the salt. We made soft tacos from the crock pot, putting cheese inside - fewer dishes! Then had lots of leftovers some additional pork and more liquid in the bottom. I added a bit more liquid and it tasted so good I've made another batch with more liquid and corn to try as a soup.

Morning Glory Muffins I

I've found the recipe to top the 'Sunrise' muffins I found in a bakery. These are perfect as is. I tried a 2nd batch fairly quickly and had run out of white sugar so used brown sugar to make up differnetce (only 1 cup total was sweet enough). The toasted wheat germ made a difference too - a nice flavor - but definatley should toast. Another suggestion: don't use red deliscious, use a tart or very flavorful apple - well worth it. Whole almonds instead of walnuts were very good.

Bran Muffins II

I used 1 C melted, cooled margerine in place of shortening and they are good. We arn't 'bran' eaters and am enjoying making as we go.

Pollo Fajitas

This was my first attempt at Fajitas - glad I used this recipe! Though I used chicken breasts, white vinegar, cayanne pepper, etc I had on hand. The lemon at the end was wonderful and leftovers are even better. Hubby and I loved this recipe- itsa keeper!

Easy Pesto

I adjusted amounts to my preference, and used minced garlic from a jar, fresh spinich in place of about 1/3 of the basil to get veggies in where I can. This was as wonderful as the recipe that inspired me to try this one. Thank you!
