Garlic-Lemon Double Stuffed Chicken

Reviewed: May 10, 2011
OMG!! This was absolutely phenomenal! I had to make the following substitutions due to lack of ingredients for a serving of 4: 1/2 cup plain bread crumbs and had to add ¼ cup crushed Ritz crackers and 1 tbsp. italian dressing mix as I had no seasoned bread crumbs Added 2 tsp. real bacon crumbles to each chicken breast pocket. Following other reviewer’s advice, I only used ½ the cream cheese and used approximately 2 tbsp. shredded cheddar cheese in each breast. Toothpicks kept breaking so I found some long wooden skewers and wover them into the edge of each breast in order to close it. I then rubbed some of the butter mixture onto each breast and then followed the rest of the recipe exactly as written. I will be making this again and again. Hubby is still raving about it! Thank you so much for sharing this recipe.

Blueberry Party Salad

Reviewed: Jun. 12, 2010
This sounds delicious but I need to know what "3 (6 ounce) packages raspberry flavored gelatin mix " means. Is that 6 ounces total or are there 6 ounce boxes sold? Hubby brought me 2 .3 ounce boxes and swears that's all they had. Any help? Thanks, Lynn

No Salt Vinaigrette

Reviewed: Oct. 22, 2009
My husband LOVED this recipe. He is on a restricted salt diet and finding tasty condiments is a huge help for me. I am going to try it with red wine vinegar for myself and I am sure it will be just as tasty! Thanks for the hubby pleasin' recipe.

Exquisite Pizza Sauce

Reviewed: Jan. 11, 2009
Before I found this recipe, I bought 2 brands of pizza sauce from the store. This was sooo much better than either one of the bought ones! I make this exactly as given and I usually double or triple the amount in order to have plenty in the fridge. I use this for dipping the Pizza Pinwheels from this site in. I make pizza with this using Jay's Signature Pizza Crust, again, from this site. An all around awesome recipe. You can play around with the ingredient amounts but it is, indeed, exquisite as so aptly named, exactly as written. Thanks for the wonderful recipe.

Jalapeno Popper Spread

Reviewed: Jan. 11, 2009
This is an amazing tasting spread! My picky, picky husband and all his family loved it! I made it exactly according to the ingredients, but I did stir the parmesan cheese into the mixture of cream cheese instead of placing it on top and then put it in the oven to bake according to the instructions provided. I never was a fan of jalapeno before but I loved this one. It was the only spread completely eaten during our Christmas and New Year's parties. Tostito's scoops are awesome to use with this spread. When eating it, prepare to sweat!! Thanks for a wonderful party recipe.

Clone of a Cinnabon

Reviewed: Sep. 10, 2008
I found this recipe to be very good and I wanted to share what I consider to be a helpful hint that I discovered while making it. Being a blind homemaker, I found it difficult to roll this dough out into the specified size rectangle. First, rather than flour my work surface, I sprayed it lightly with cooking spray and also coated my hands with it. Then, I decided to take half of the dough and place it on the surface, which in my case, was a standard sized cookie sheet. Using my hands, I was able to press it out to fill the pan and thus have a perfect shaped rectangle. I followed the remaining steps except that I started on the short end of the rectangle as it was a halved amount of dough. Then, I did the same thing with the other half of the dough. Voila! It worked out great and the rolls were scrumptious. This may be a helpful hint to those of you who are having trouble getting that perfrect rectangle, shape, blind or not! :) Happy baking!!

Strawberry Pineapple Bread

Reviewed: Jun. 11, 2008
This recipe was as wonderful as I had hoped it would be! I, too, had to make a few substitutions as my pantry was a bit low on some things. I use 1/2 cup applesauce and 1/4 cup peanut oil and 1 stick of margarine in place of the oil called for. Otherwise, I made this recipe exactly as called for and it turned out deliciously! I am a totally blind cook with chef aspirations so I love it when something like this comes along that is all but foolproof! And, by the way, the peanut oil seemed to give it a bit of a nuttier flavor that enhanced the pecans that I used, since I was also out of walnuts. I'll be watching for more recipes like this to make and give as Christms gifts this year! Thanks so much to the contributor and all of you who wrote reviews. It was all very helpful to me!
