Mini Pumpkin Butterscotch Muffins

MMMM, Mommy, you have to make these again! That's the quote I got from my 7 year old. I altered the recipe to make it a little more healthy - white whole wheat flour, 3/4 cups brown sugar - no white sugar, 1/4 cup butter and 1/4 cup applesauce - even so, the muffins were wonderful and the butterscotch was a nice companion to the pumpkin.

Brown Rice Hot Dish

REALLY good! I made almost exactly as described except I didn't bake it - after I mixed everything together (used slow-cooking brown rice - sauted everything else together while rice was cooking), it was so good, I left it like that. It does taste a lot like stuffing and really spruced up plain old brown rice. Great flavors together, and easy to make.

Halloween Bloody Baked Rats

Very cute idea, I ended up with some problems, though; the spaghetti tails burned (maybe not enough sauce to keep them moist? I used a diffent sauce). My "guts" oozed out while baking on most of the rats, and I couldn't get the pea eyes on. I suggest pre-planning and creating little pockets for later eye placement and making sure the meat is wrapped tightly around the cheese. I gave this four stars because of the presentation; great holiday idea, although honestly I used my own meatloaf recipe and sauce, so my rating isn't based on flavor. This made about 9 palm sized rats for us.

Whole Grain Healthy Banana Bread

I've been looking for a healthy banana bread for a while and this one was good and still had a strong banana flavor. I only substituted brown sugar for the splenda and one egg for the egg white, and it was tasty and filling. A toasted slice with a little cream cheese on the top was a handy traveling breakfast that held me over for three hours!

Chocolate Chip Cookies (Gluten Free)

Maybe the different review results have something to do with the brand of GF flour? I used Bob's which is bean based - and I could definitely taste it in the dough, but the cookies themselves were wonderful and I couldn't tell the difference between these and toll house. I did use 2 eggs and I did add 1 tsp xanthan gum, and reduced baking soda to 1/2 tsp (I can always taste it when I am not countering it with an acid). The first couple batches spread nicely, but stuck to pan more than traditional cookies, but the last batch I used parchment paper and they came right off. Mine looked just like the picture. Really a nice treat for my wheat intollerant daughter.

Hash Brown Quiche

I made this as written (except used tsp of dried minced onions in the egg mixture rather than fresh). I cooked the hashbrowns for the 20 minutes, and although they were pale and soft after the 20, they were perfect after the remaining cook time (think I forgot to lower oven temp, though, now that I think about it). So I did not need to cook the hashbrowns longer as suggested in other reviews. Used the 2 eggs and the ham and this was wonderful as a breakfast casserole, especially for my wheat sensitive daughter. Wonderful taste and very easy.

Baked Apple Oatmeal

Really enjoyed this - didn't use wheat germ or raisins (didn't have the former, don't like the latter) and it was wonderful, warming, healthy, and hearty. It was also great after a microwave heat the next couple mornings - I was wondering if it would be as good when it wasn't fresh out of the oven, but it did fine. Am making this again tonight!

Chocolate Waffles I

I doubled the recipe, using whole wheat pastry flour instead of white, and added choc. chips. Made them in a belgian waffle maker that makes 4 toaster sized waffles - ended up with a ton of waffles that were tasty, better for you than breakfast cereal, and we take directly out of the freezer, toast in the morning, and eat in the car on the way to school. So good - getting ready to make a new double batch!

Vegan Cupcakes

I'm not vegan, but used this recipe and it was fabulous - like eating marzipan in cake form. Being not vegan, I used cow's milk in place of the almond milk (which did not curdle), but did everything else the same - except used almond extract instead of vanilla. Loved the texture, the flavor, and ingredients (going to buy almond milk tonight). Will be my go-to cupcake recipe, especially for my lactose intolerant nephew (ironically his sister is allergic to coconut!).

Whole Wheat Snickerdoodles I

A really good "healthy" snack option. I did alter; I used 2 Tbls butter and 1/2 cup applesauce, similar to another reviewer and had my doubts b/c the dough was very sticky even after I added extra flour, but these cookies turned out very tasty! My daughter liked them better than our usual healthy cookie option and that one has chocolate chips! I will still play with the ratio of butter/applesauce because I like a criper cookie - these are very cake-like in texture, but really very good even with the lower fat alteration!

Crazy Cake

My 9 year old made this for my birthday - I was a little nervous at the appearance when it came out of the oven, kind of like a lava cake interior, but it set and was very moist - even after sitting out all day. The flavor was great - better than the store-bought cake someone else picked up, and truly easy. We didn't have white vinegar and subbed apple cider vinegar, couldn't tell the difference. Will make again, definitely!

Chicken Tortilla Soup V

looks like a lot of us were making soup on the 25th! I was so happy with the ease of this recipe and even picky 7 year old ate it (she'll eat anything with cheese and/or chips). I had leftover chicken and I used tomato sauce instead of salsa (we're not salsa people) and it was very good with the substitution. It was also a substantial soup, but not heavy. I'll add beans next time too.

Cold Roasted Moroccan Spiced Salmon

My Dad LOVED this fish - he's been really looking for flavorful dishes after being spoiled eating at Boma in Disney World. This fish was very flavorful, the cumin was the predominant flavor and I love cumin, but it was a little much for me.

Crab and Swiss Quiche

Although the imitation crab I used didn't impart any particular flavor worth discussing, this is definitely going to become my standard quiche recipe. The flavor was great and the texture was consistant and creamy yet fluffy. I rarely have sour cream or heavy cream on hand which is standard in many quiche recipes, but I always have mayo. This had the best flavor compared to other quiches I tried. I won't do the crab again, but I can't wait to try it with other ingredients. A wonderful base quiche!

Artichoke Spinach Lasagna

This was tasty and not at all soggy. I let the liquid cook off and added the broth/garlic/onion combo to my spinach and artichoke mixture (I pureed the artichoke). Added the sauce and thought it didn't look or smell very good as a finished product, but was actually quite tasty when cooked. The artichoke added good flavor.

Plum Bread

My whole family really liked this, but I was disappointed b/c I couldn't taste the plum - and I pureed 8 plums! I used extra plums in place of most of the oil and just used 3 Tb of butter. So, even with extra plums, there was no plum flavor I could detect. It was a great, moist, spice cake - but not plum-y. I gave it a high rating though, b/c everyone loved it not knowing what it was - the cake was gone by the end of an evening!

Molasses Cookies

These were fantastic. I followed recipe as written. The cookies came out crackle-topped, thin, and crispy-chewy (the think interior was a little chewy, with a mostly crispy outside - perfect) and with great flavor (I only mildly like molasses). I thought they were too chewy out of the oven and I put them back in, keeping one out just to taste. After a minute I did taste my sampler to find that the cookies crisp up upon cooling, so in total, my cookies baked for 14 minutes and were perfect.
