Whole Grain Healthy Banana Bread

I've been looking for a healthy banana bread for a while and this one was good and still had a strong banana flavor. I only substituted brown sugar for the splenda and one egg for the egg white, and it was tasty and filling. A toasted slice with a little cream cheese on the top was a handy traveling breakfast that held me over for three hours!

Salmon Fillets with Creamy Dill

we loved this - it's my new favorite salmon recipe - although I did quarter the sauce and still had too much and had to throw extra away. Followed recipe as-is, cooked 20 mins - wonderful flavor that complements the fish.

Very easy, very rich, and I halved the recipe and still came out with more than enough for 4 people. This is kind of like a dumpling version of creme brule.

Easy Apple Cinnamon Muffins

I think I altered this recipe so much it's not quite the same anymore. I did so based on the calorie content. I used brown sugar (1/2 cup), whole wheat pastry flour mixed with the white, and applesauce instead of the oil. I did not add the topping as I intend to use this less sweet version for breakfasts in the morning with cream cheese spread in the middle. The lower-cal version is still good, but I bet the original version is wonderful!

Artichoke Spinach Lasagna

This was tasty and not at all soggy. I let the liquid cook off and added the broth/garlic/onion combo to my spinach and artichoke mixture (I pureed the artichoke). Added the sauce and thought it didn't look or smell very good as a finished product, but was actually quite tasty when cooked. The artichoke added good flavor.
