Country Apple Dumplings

Brown Sugar Meatloaf

I used ground turkey instead of beef and I used seasoned bread crumbs instead of saltines. I formed a loaf in a casserole dish and pressed the brown sugar on top of the meat mixture and poured the ketchup over the brown sugar. This was a nice change to my usual meatloaf recipe.

Sweet, Sticky and Spicy Chicken

So good! I doubled the brown sugar and, as suggested by others, dredged the chicken in flour before cooking. Those were the only changes that I made and this was awesome! The next time, I'm going to have to double the recipe. There were NO leftovers! This recipe is a keeper!

Cabbage Fat-Burning Soup

I started a diet this week and thought it would be a great idea to have a pot of this soup in the fridge. Glad I did! Whenever I want a little something between my scheduled meals, I warm up a bowl of this delicious soup. As suggested by another user, I added some ground turkey for a little extra protein. Wish me luck!

Baked Honey Mustard Chicken

This was a very good weeknight recipe! I used chicken tenders, perhaps too many... I had to double the sauce to have enough to brush on both sides of the chicken. But, it was quick, easy, & delicious.

Cheeseburger Meatloaf

This is good and adds a neat twist to plain, old, Monday night meatloaf. I used ground chicken and it was quite tasty. I added a few more spices, (garlic powder, Creole seasoning, Adobo All Purpose seasoning). I also followed the suggestion to skip the pinwheel method and just halved the meat mixture and layered the cheese between the halves and formed into a loaf. I'm sure this made my life much easier and I thank all who suggested it! :-)

Broccoli Chicken Roli

First of all, I forgot to buy broccoli, but I had zucchini on hand and used that successfully. I omitted the green pepper. I have to agree with Sue9688, I thought I understood the "sun" instructions, but I just had too much filling. With that said, I was prepared and bought two cans of crescent rolls. There was still a lot of filling, so I filled in the center of the rings with the extra. Wish I had remembered Sue's warning about the cooking time. At 400 degrees, the bottom of my first Roli burned after 20 minutes. Luckily, I had assembled the second one and put it into the oven a few mintues after the first, so I turned the oven down to 350 degrees to finish that one. The filling is delicious. So, having too much of the chicken mixture isn't a problem. I'll just cook it at 350 degrees next time.

Crustless Cranberry Pie

This is so easy and so tasty! I didn't really know what to expect, but I didn't expect it to taste so good! The first time I tried it, I didn't really care for the almond extract and I had pecans on hand, so that's what I used. It was good. But, I made it better. The second time I made this, I used vanilla extract in place of the almond, used pecans again, and made a topping with more chopped pecans and brown sugar. I baked it in a 9x9 casserole dish instead of the pie dish. Perfection! I was suprised at the nice balance of sweet and tart. I had to bake another the very next day because my family devoured it in a matter of hours!

Easy Slow Cooker French Dip

OMG!! This was delicious! After reading a few reviews, I used a chuck roast and one can of french onion soup & one can of beefy mushroom soup. The beer really does add a wonderful flavor to the meat. It was SOOOO tender! The buttery, toasted rolls soak up the au jus and... Mmmmmmm! This is a great sandwich! Oh, I used a shredded blend of cheddar and American cheeses which added a whole bunch of ooey, gooey, cheesy goodness to the party! I'll be making this again and again!

Chicken Tortilla Soup IV

This was really good! This is the third recipe that I've tried for Chicken Tortilla Soup and they've all been very tasty. This is the first time that I've included beans and corn and I really liked it. I didn't fry the tortilla strips this time, but plan to try it next time. Instead, I offered store-bought tortilla chips, sour cream, and shredded cheese as garnish. Although I didn't, my husband said he missed the avocado & lime that I added to a previous recipe. Next time, I'll offer avocado and lime slices as garnish, too. Either way, this was a great soup!

Absolutely delicious! I prefer white wines over reds but decided to try this after tasting a "Christmas Wine" at a local winery. This tasted better than what they served! My husband asked me to make sure that I double the recipe the next time and to please have some when his mom comes over for Christmas dinner! I'll be serving plenty of this... It's gonna be a very Merry Christmas! :-)

Simply Parmesan Chicken

Delicious! I used chicken tenders instead of breasts b/c that's what I had on hand. I knew that I'd need to reduce the cooking time. But, I still over cooked them a bit. (They were a tiny bit dry). Nevertheless, my family loved them! The only change that I made to the recipe was seasoning the chicken with salt, pepper, & Creole seasoning before dipping in the beaten egg. Oh! I also used Italian style bread crumbs and reduced the Italian seasoning to 1 teaspoon. Still quite yummy! I really don't think you can mess this recipe up!

Mmm-Mmm Better Brownies

I'm giving these 3 stars, but the recipe is probably worthy of 4 stars. It was a quick & easy recipe to satisfy the sweet tooth of a self-proclaimed chocolate lover (my husband). But, my personal preference for a different texture than this recipe produces largely contributed to the rating. While moist and fudgy inside, the brownies were a little crunchy on the outside. I prefer a more "cakey" texture. The flavor is quite good and I mixed a handful of semi-sweet chocolate chips into the batter before spreading into the pan to bake, which was a nice addition to the "chocolatyness". Would probably make these again, but they wouldn't be my go-to brownie recipe.

Creamy Au Gratin Potatoes

I followed the recipe exactly and this dish was good. However, next time I'll follow the suggestions of some other reviewers. I'll mince the onions instead of slicing. I'll mix them with the potatoes, instead of layering. I'll double the sauce and add more cheese to it. And I'll layer the sauce with the potatoes and onions intead of just pouring it on top. Again, this was good as the recipe is. But, for me, these small changes will make it great!

Beef Tips and Noodles

This was delicious! As suggested in other reviews, I used a cup of milk and even added a jar of beef gravy to make sure that I had enough gravy for the noodles. After cooking the noodles, I added a couple of pats of butter and sprinkle of dried parsley. After dinner, I mixed the leftover beef tips & gravy with the noodles for storage. It was even better the next day! I'll make this again and again! Great comfort food!

Chicken Tacos

As others suggested, I let the chicken cook until the liquid was completely reduced. I also added a few extra spices--cumin, cilantro, and a packet of Sazon Goya seasoning. Very flavorful, but my chicken was a little dry on it's own. Once paired with the toppings and sides (black beans & Spanish rice) in home fried taco shells, this was an awesome family meal! (Used Hard Taco Shells recipe) My kids helped with the preparation and really enjoyed making their own tacos. This is a keeper!

Hard Taco Shells

These turned out great! I was afraid that they'd be oily. But, after reading a few reviews, I cooked them in a cast iron skillet with just enough oil to coat the bottom and they were perfect. Shaping them while they cook took a little practice. However, it gets easier. I also lined a bowl with paper towels and hung them inverted over the bowl on a cooling rack. I think cooling over the rack maintained the integrity of the "U" shape. Sprinkled a little salt on them while still warm. Excellent! (Took 1 star away b/c 2 Cups of vege oil is definitely not needed.)

Just made these for my kids' snack this week. (If my husband likes them as much as I think he will, they'll only last a couple of days!) Bagged in little snack-sized zipper bags...perfect portions! This was so easy to make and super-yummy! Where has this recipe been all my life?!
