Best Brownies

These turned out fabulously. I only cooked them for 25 minutes -- they were done, but moist and chewy. My husband, who dislikes chocolate (don't get me started) said they were delicious and inhaled 6 of them in one sitting. That sums it up right there!

Baked Garlic Parmesan Chicken

My 4-year old can be a bit of a picky eater, but she'll eat an entire chicken breast when I make this. I make extra and the leftovers go in crusty buns for my husband's lunch the next day. The only change I make is to marinate the chicken breasts in Italian salad dressing for a few minutes before coating them in the bread crumb mixture. Yummy!

Different Chicken Cordon Bleu

I wasn't crazy about the stuffing topping. I assumed it would absorb some liquid and soften, but instead I just had a bunch of croutons on the chicken. If I make this again, I'll prepare the stuffing mix first, then put it on top.

Tender 'n' Tangy Ribs

I doubled the recipe thinking we'd have leftovers, but between 3 of us we polished the ribs off. I've tried making ribs before using the boil & bake or boil & bbq methods to get them more tender, but this recipe is far superior. The meat just fell off the bones and the sauce was delicious. I served the ribs with mashed potatoes and peas & carrots and the sauce went really well with the mashed potatoes too. I will definitely be making this again.

Hawaiian Chicken II

This was very good after I made the following changes: I omitted the brown sugar altogether (it's sweet enough without it), decreased the butter to about 2 tablespoons, added 1 tablespoon cornstarch to the sauce to help thicken it up, and decreased the cooking temp to 350 degrees. I also added one can of drained pineapple chunks, 1 coarsely chopped red pepper and 1/2 coarsely chopped red onion with about 20 minutes to go. It tasted great, but the only reason I'm not giving it 5 stars is that the chicken looked pale and undercooked, even though it wasn't. Next time, I'll brown the chicken for a couple of minutes and reduce the cooking time by about 10 minutes. It'll be a 5-star for sure!
