Beef Nacho Casserole

great taste, and the miracle whip gave it even more zip! loved the peppers, onions, etc that were in it from the chunky salsa. easy recipe and i will definitely be making this again. i do have to say that next time i will cover it will aluminum foil because the cheese on top became hard and crusty. thanks! yum!

Mom's Zucchini Bread

absolutely delicious! i used 1/2 cup vegetable oil and 1/2 cup applesauce. could always use more than 2 cups of zucchini and i believe the recipe would still be fine. i used 1 cup of white sugar and 1 cup of brown sugar. i think i'll try decreasing the sugar by 1/2 cup next time. lovely recipe! thank you!

Refried Beans Without the Refry

the only reason why i gave this 4 stars instead of 5 is because i think it calls for way too much salt (and pepper for me). i would only add 2 tsp salt and maybe no pepper next time (due to personal preference - not a fan of pepper). i would be curious to see how it turns out if you cooked it in a beef broth instead of the water - or maybe 3/4 broth and the rest water. good, healthy recipe otherwise and easy to make. thanks!

Corn Dog Muffins

i didnt care for this recipe versus store-bought corndogs. my kids didnt eat much of it either. i did slice up the hot dogs and added them to the muffin mix - i personally thought 9 was way too much. probably could get by with 6 hot dogs and the sugar is not necessary at all. thanks for the try!

Honey Glazed Ham

fantastic! i had a bone-in, 7 lb. precooked ham. i scored the top (cut 1/2" deep strips in the top and then did the same diagonal to those cuts) and halved the recipe. definitely dont need the full recipe whatsoever! i used 1/4 cup brown sugar instead of the karo syrup and 1/4 tsp. ground cloves instead of whole cloves. i put the ham and glaze in an oven bag, cover a cookie sheet with foil and cooked it in the oven for 18 minutes per pound. every twenty minutes i flipped the baste around on the ham - voila, theres my basting. i wouldnt do it any other way than with an oven/turkey bag. loved this ham!

Honey Grilled Shrimp

wasnt blown away by this recipe by any means, but i would make it again. mostly had a worchestire flavor - didnt tast much of the honey flavor that was in the basting sauce. i did decrease the worchestire marinade to 1/4 cup and only added 1 tbsp. to the basting sauce. next time i think i'll just skip the worchestire in the basting sauce completely. also, it was pretty greasy probably due to the butter in the basting sauce. so next time i may just try half the butter with more honey. marinaded the shrimp for approx. 7 hrs. served with brown rice and grilled vegetables. also, i used pre-cooked shrimp, which i wont do again - was only on the grilled a short short time, but still was rubbery and chewey. stick with the uncooked shrimp!

JELL-O Popcorn Balls

used 2 packages of orville redenbacher microwave kettle corn. buttered hands and formed into balls. yum!! update: used sugar-free jello and there was no difference in taste - just made me feel better!

Apple Crisp II

In one word, addictive. I do think it could use less sugar, at least 1/2 cup, in with the apples. I made it with 6 Granny Smith apples because I like to have more crisp than apples, but that was too few. Next time I will try 8 or 9 apples. Oh, and I used 1/4 cup water and it was about perfect, just a tiny bit watery. Would be interested in sprinkling some nutmeg on top of the apples too as other reviewers suggested. But all in all, it is a great recipe as is without any changes like nutmeg. Thank you!

Cornbread Muffins I

great cornbread muffins!! one thing i will definitely change next time, is to decrease the sugar by 1/2 cup. they were pretty sweet. i did use whole milk though since that's all i had - it may have made them even sweeter. i can see how these would be great with chili. thanks for sharing the recipe!

Barbeque Pork Two Ways

definitely nothing wrong with this recipe, it is very good. i gave it 4 stars just because there are other recipes similar to this one on this website that are better. great recipe though, and extremely easy to make. the only thing about the pork shoulder is its fatty and i dont care for the extra work of trimming it. also, the sauce didnt thicken up so even with straining it, it'll make your sandwich soggy.

Buttermilk Salad

the buttermilk gives this salad a little zip, but i thought it was overall a pretty boring salad with just crushed pineapple. i would add some mandarin oranges and red grapes if i were to make it again. used peach jello. thanks for the recipe.

French Quarter Bread Pudding

best bread pudding recipe i've made. the only thing to watch for - dont cook it for too long cos the outside will get dry and not very tasty. i will probably double the spices next time. didnt have a problem whatsoever with the raisins. just pushed them down into the pudding so they werent on top. covered with foil. oh, and i did have to double the whole recipe (minus the bread, pecans, and butter) because i mustve had a big loaf of bread and it didnt get soaked through real well. thanks!!

Cheesy Ham and Hash Brown Casserole

i was really worried about this being too salty per other reviews, but it wasnt. great, easy dish!! it did seem a tad dry so maybe i'll try adding 1/2 cup fewer hash browns next time and see how that goes. thank you!

Yummy Bok Choy Salad

i probably shouldnt be rating this recipe since i changed it, but still the basics of it is excellent! great flavored dressing! i used just enough romaice lettuce and ramen noodles for 2 servings so nothing was leftover for fear of getting too soggy. addicting dressing! just remember, a little bit goes a long way though. thank you!

Crustless Spinach Quiche

tasted great, and i could see how it would be good cold too as appetizers. although, for me, i just didnt feel good eating such an unhealthy dish with all that cheese :) my kids passed on it too, which makes it hard for me to make again. very easy easy dish and very good too though. thanks!

Creamy Chicken and Wild Rice Soup

absolutely wonderful soup! i added about 15 baby carrots (boiled to soften), celery (3 stalks), and garlic (sauteed the garlic and celery) and i didnt have all the cream so i did 1 cup heavy whipping and 1 cup whole milk. it was perfect!! thanks so much!! by the way, i think you could definitely get away with using regular milk to decrease the calories.
