Jay's Signature Pizza Crust

I thought the crust was just fine. Not outstanding, but nothing real wrong with it. Took about 1/2 cup more of flour than called for. Used the whole thing for a pizza. Didn't let it rise on the pan, Craig just put it in the oven for 3 minutes to pre-bake before adding ingredients. Make sure to get sauce close to edge. Edge of crust was real hard. What if didn't pre-bake? What if let it rise for 15 minutes?

Best Tuna Casserole

For a tuna casserole, its 5 stars, but for my tuna/pea- fearing family, I have to rate it a 4. Made exactly as described except just sprinkled in a few peas. Good.

Best Big, Fat, Chewy Chocolate Chip Cookie

Made exactly as stated. Slick with the parchment paper. Don't even need spatula to take off cookie sheets. Used cookie scoop. Convection for 13-15. Don't let them get too brown or else pretty crunchy and I prefer softer cookie. Update: crunchy cos small; make them bigger (make 18 cookies) and they're soft and delicious; 1.5 cups choc. chips is enough too

Easy Meatloaf

Seemed juicy around the outside even with 93% hamburger; interesting topping with the mustard; doubled the topping; would be curious to try it with seasoned bread crumbs; added 1 tbsp. worchestershire; kids said they liked it (Nicholas said it like it better than moms recipe)

Simple Turkey Chili

Pumpkin Ginger Cupcakes

Good, but more dense like a muffin than fluffy like a cupcake. I deceased the sugar by 1/2 cup and could decrease by another 1/4 cup probably. Did 1/2 cup butter and 3/4 cup applesauce. Used crystallized ginger (0.03 lb. and should triple that at least to get 1/3 cup but I don't think the crystallized ginger is necessary??). For the frosting: 8 oz. cream cheese, 1/2 cup softened butter, 2 tsp. vanilla, 3 tsp. cinnamon and 3 cups of powdered sugar; perfect amount for the cupcakes, but too runny therefore add more powdered sugar

Mini Pumpkin Butterscotch Muffins

Kids loved these. Very tasty, but too much sugar. Keep the brown sugar and get rid of the white. Also try cutting the butter in half or do applesauce instead. Put in greased baking cups. Makes 18 regular muffins, cooking for approx. 20 minutes.

BBQ Chicken Calzones

Kids actually ate this without complaint. Used pillsbury thin pizza crust, which turned brown fast therefore decrease time. And maybe try putting some butter on it towards the end next time. Didn't use the cilantro, but it would be great for Craig and me. -start at 10 minutes less time and check on it

Apple Crisp II

In one word, addictive. I do think it could use less sugar, at least 1/2 cup, in with the apples. I made it with 6 Granny Smith apples because I like to have more crisp than apples, but that was too few. Next time I will try 8 or 9 apples. Oh, and I used 1/4 cup water and it was about perfect, just a tiny bit watery. Would be interested in sprinkling some nutmeg on top of the apples too as other reviewers suggested. But all in all, it is a great recipe as is without any changes like nutmeg. Thank you!

Absolute Mexican Cornbread

Great recipe, especially With the burrito pie recipe on this site. I used 6 tbsp. butter and 1/3 cup sugar. Definitely good on the sugar, but next time I might try 2-3 tablespoons more of butter. Wouldn't use the full amount of sugar or butter like the recipe states, though. Thanks so much for the recipe!

Southern Fried Cabbage

This recipe is completely simple. Kinda too simple. I doubled the bacon (used turkey bacon) and didn't cook it in oil. Also, I cooked the cabbage for longer. I am not a big cabbage lover so this recipe was just ok for me.

Banana Bread

What banana bread isn't good? The only thing I would change about this one would be to put it in one pan. Dividing it up makes the loaves too small. Thank you for the recipe!

Shrimply Delicious Shrimp Salad

I personally think this recipe is a good base, but made as is I think it's very boring. So next time I would try horseradish sauce, garlic salt, maybe some mustard... I'll have to read they the reviews and see what "zip" people have used. Also, its a good idea to cut up the shrimp. Thanks!

Asian Beef with Snow Peas

This was a tasty recipe and so easy! Next time I will cook the sauce separately, fry the steak 1/2 - 3/4 done, then add the thickened sauce to the steak at the end and cook a few minutes longer. When I put it all together the steak ended up getting overcooked and was tough. I did double the sauce too.

White Cheese Chicken Lasagna

I only used 10 oz. of spinach cos my kids are appalled by anything green in their food, but I increased the chicken a bit. Easy recipe to make. I just mixed everything together and layered it with the noodles. I would have added one more layer of noodles (4 more noodles). The reason why I gave this only 4 stars is because there was a TON of cheese to this recipe. I felt my arteries clogging as I ate this...and we are a cheese family. So next time I will decrease the cheese by 2 cups then it should be more reasonable. Thanks for the recipe!

Chilled Strawberry Soup

This soup was good and the only reason I gave it 4 stars instead of 5 is because I didn't LOVE it, but would make it for company if I wanted a light side dish like with a ham casserole. It was just a little runny so next time I will add less milk and a few more strawberries. Also, I could really taste the sour cream so next time I will decrease that a bit too.
