Cheesy Ranch Potato Bake

good recipe to change things up. stirred the potatoes a couple times while cooking. i halved the recipe so only used 2 tbsp. of butter - 3 tbsp. would've been fine cos potatoes started sticking to the pan at the end of cooking time - not sure if there's any way to really avoid this - just have to catch it before it happens i guess. will make again! thanks!!

Barbecue Ribs

used baby back spare ribs and cooked it as suggested - double foiled in the oven. marinaded it overnite and due to the wind storm had to bake it in the oven @ 350 degrees for 40 minutes (cooked it 15 minutes with foil, then basted and removed foil, cooked for another 15 and basted, then another 10 minutes) then broiled for 3 minutes. the ribs were excellent. not dry or tough at all. fantastic recipe!! thanks!

Strawberry Chocolate Mousse Cake

i used mini chocolate chips and it melted really well. i did bake the crust at 350 degrees for 7 minutes and that was perfect. very easy to make and looked great. but the mousse texture was really strange - my husband said it was gritty-like. i thought it was a starchy texture or something - hard to describe. and the topping didnt have a whole lot of taste, but yet i think it's needed for the cake just to even out the mousse.

Barbecue Beef Cups

what makes these special is probably the barbecue sauce you use. if you love your bbq sauce, you'll love these probably. i used sweet baby rays and loved this recipe. i used the grands biscuits. seemed like there was too much biscuit to meat so next time i'd split each grand biscuit and that should be about perfect. very easy to make and something different for the kids (and us!) than barbecues. thanks for the recipe!

Creamy Chicken Lasagna

yum! my whole family licked this up. i followed the ingredients exactly. the only thing i changed was cutting up the chicken instead of shredding it and i just added 2/3 of the spaghetti sauce to the chicken/cream cheese/moz cheese mixture instead of adding them separate. very easy to make and great tasting! thanks for the recipe. this will go into the monthly schedule!

Orange Cream Fruit Salad

this was a nice recipe. it thickened up perfectly and had a great taste. but the reason for the 4 stars - seemed like much more work where you could just use a peach yogurt or whatever flavor and get the same taste for much less work and calories. but other than that, it is a good recipe and definitely worth a try. thanks!

Saltine Toffee Cookies

my guests loved this, i thought it was ok. i soaked all the crackers and had more sauce so i just poured it all on and i dont think that was the right decision. the crackers on the edge where there was extra sauce wouldnt break apart and got thrown. some crackers were chewy too. i didnt near enough chocolate chips i realized as i was making them, so i had to add the white chocolate chips and they were still very good. i think next time i will use more crackers, less sauce, and half chocolate chips and half white chocolate chips.

Golden Rum Cake

sorry, but we didnt care for this. if your not really a rum lover, you more than likely wont like this cake. it has a lot of rum in it and the smell is powerful. for the rum in the cake i used myers rum and for the glaze i used appleton (as suggested by lindsay w). i let the glaze soak in for a few hours. seems like the recipe made a lot of glaze - if i had liked it and wanted to make it again, i wouldnt add the entire amount of glaze. but other than that the cake turned out very nice looking.

Southern Potato Salad

loved it! thanks for the recipe! i said i would never make a potato salad cos it was so much work, but this was easy and so satisfying! the only thing i changed was adding 1 tbsp cider vinegar and 1 tbsp sugar as suggested by retired cook. with these 2 additions i liked it much better. i did cook the potatoes in the oven for an hour and then let them cool in the fridge. i cut them up with the skins on and loved it that way (red potatoes). much easier too! my husband said he didnt ever think he'd try a potatoe salad he liked, and he loved this one. yum!

Chocolate Brittle Surprise

the recipe makes quite a bit brown sugar/butter mixture so more crackers can be used. some of mine came out chewy and i couldnt break some apart so i would suggest only using enough mixture to cover the crackers and that's it. (i used all the mixture and that was probably too much and make them chewy - just my guess). i didnt have enough semisweet chips so is used mostly white chocolate chips and the taste was still great. friends really thought the brittle was excellent. i will make it again and hopefully have better success. thanks for the recipe!

Too Much Chocolate Cake

this is one recipe that has 5 stars from so many people for a reason! this cake couldnt have been easier to make. and it is sooooo good. simple and simply delicious. my new favorite...and i dont see another recipe changing it! i did end up cooking it for 15 min. extra and it turned out perfect for me. thank you thank you for sharing the recipe!!

Never Enough Green Bean Casserole

althoug i didnt care for my recipe, i think this one would get five stars if i had found the right cheese/bacon combo. i didnt add extra mushrooms cos i thought there was enough in the mushroom soup. the cheese/bacon cheese i used was crystal farm's cheddar with bacon cheese food and by itself it didnt taste good so i'm not surprised my recipe turned out like it did. we put cheese on our bean and peas to get the kids to eat them, so i think this recipe is right up our alley. next time i will try velveeta and bacon bits or regular "cooked" bacon. thanks! **update** made this recipe again with a jar of old english cheese and it was fantastic!!

Cinnamon Rice with Apples

made the recipe with minute rice, adding apples halfway thru the 17 minutes. it was done within the recipe's stated time. i thought the flavor was pleasant - didnt think more cinnamon or was needed and didnt think it was too sweet. the apple juice i used was from healthy balance so it contains less sugar so maybe that's why it didnt taste too sweet. but i guess i'm not a huge rice fan anyway so no one in my family really ate this up. but i do think if you like rice, it would make a fantastic side dish to several main dishes. we served it with ham and thought it was good, but think it would be great with grilled pork chops too. definitely a recipe worth a try, esp. since it's so easy to make. thank you!

Homemade Banana Pudding Pie

my pie came out kind of runny and never got eaten by anyone. the top crust was a definite brown so i dont think it was undercooked. dont know what happened. kind of confused by the recipe cos it calls for wafer crumbs, but in the directions it says line plate with alternating wafers and banana slices. hmmm... so i used mini wafers and alternated them with the banana slices. didnt care for that - maybe that was why it turned out bad. if i were to make it again, i would grind up the wafers and have that as a bottom layer and then put a layer of bananas on top of the wafer layer.

Grilled Brown Sugar Pork Chops

delish! fantastic recipe. thank you! i made it exactly as stated. makes a lot of marinade, more than necessary for 6 pork chops. could probably halve it, or save the left over for chicken in a couple days! i did have to add more cornstarch to thicken it up more, but thats the only change. enjoy!
