Apricot Pork Tenderloin

I love that this recipe is easy to make, it doesn't require weird ingredients and the KIDS LOVED IT. The only change I made was putting Olive Oil in substitution of butter and I used apricot, peach, passion fruit spread because that's what was on sale. It's a great recipe to have on hand and I will definitely make it again and again.

Grilled Fish Tacos with Chipotle-Lime Dressing

LOVED IT!! Since I couldn't find adobo sauce easily in Canada I used a few splashes of hot sauce (similar to Tabasco) instead. I also cooked the fish in the marinade in a skillet instead of using the grill. My husband remarked that the tacos were "restaurant quality". I will definitely make these again.

My Mom's Swiss Steak

This dish was flavorless, the beef was tender but it was like chewing on a piece of white bread, just blah. I think the reviews are skewed here, if you follow the recipe, which I did exactly it doesn't end well.

Fruity Rice Mix

This is an ok recipe, it doesn't WOW you but it is a good alternative to regular white or brown rice. My husband and kids did eat it and said it was good, so I would say it is worth making a small batch once in a while, I don't know that I would make up the 84 servings as suggested though.

I made this for my family and it wasn't very good. It's not hearty as far as serving for a meal and it was very unflavorful. I wouldn't make it again.

Sam's Famous Carrot Cake

Very delicious!! I made this as a birthday cake for my husband. I followed the recipe without additions or subtractions and it was outstanding! It stayed moist for about a week until it was all gone. Super moist and so full of goodies it was a huge hit. I even ate the raisins which I don't usually care for. Thanks!
