Ultimate Chocolate Dessert

This was so easy to make--especially if you use bittersweet chocolate chips instead of buying a bar and chopping it. I had a 10 oz. bag of bittersweet chips and decided to use the entire bag so I increased all the other ingredients 2.5 times. I spooned the dessert into six ramekins. It set up very well. It could be made elegant looking by adding a dollop of whipped cream and some fresh raspberries or ribbons of orange peel. Tasted very good.

Razzy Blue Smoothie

I didn't have flax meal so used flax seed; also used French vanilla yogurt as I didn't have raspberry on hand. I thought this was rather bland. Reading the ingredients, it seemed there were too many competing flavors--almond, banana, grape, raspberry, blueberry--for any one to stand out.

Shredded Apple Carrot Salad

I made this yesterday. Decided to double it as it didn't seem to make a lot. I didn't have fresh basil so left it out. I also used olive oil instead of safflower and a regular apple (I think a Braeburn) instead of a Granny Smith. I didn't shred the apple or carrots--instead I used a vegetable peeler and made "ribbons." The dressing completely overwhelmed the apples and carrots. I think the concept is good but it would be better if the apples were finely diced; maybe do the same with the carrots; cut the dressing in half; maybe add some craisins, raisins, or other dried fruit.

Grandma Jensen's Nuts and Bolts

The recipe states it makes 12 cups which isn't correct as all the cereals, crackers, and nuts = 14 cups. I used oyster crackers instead of the cheese crackers, Crispix in place of the oat cereal, and shredded wheat bites in place of one of the Chex cereals. I decided to put it in my crock pot. It filled the crock pot completely. I didn't think to use a vented lid in place of the normal crock pot lid so the top layer of the mixture ended up a little soggy from moisture. I don't know if I would make this particular recipe again--it was OK but, sogginess aside, it didn't "wow" me.

Spinach Quiche

Easy to make. Very similar to another quiche recipe on this site (can't remember it's exact name). To cut down on fat/calories, I didn't use a pie crust. Believe it or not, Rainbow Foods, a large grocer in my area, did not have the frozen chopped spinch. It did, however, have frozen cut-leaf spinach so I got that. I also used fresh mushrooms and just dumped some in since I like them. I had a 4 oz- pkg of herb/garlic feta and then added 1/2 container of plain feta. I used a Cheddar blend shredded cheese. It baked up very well. Didn't seem greasy as others have commented but I was surprised by the amount of butter for sauteing the onion and garlic. I will try to cut down on that in the future.

Raspberry Cream Cheese Coffee Cake

This was very easy to make. Used a pastry blender to mix in the butter. I took out 1 c. of crumb mixture and then forgot to sprinkle over the top until the cake had been in the oven for 18 minutes. I sprinkled it on then and let it cook for an additional 5 minutes and it seemed fine. One could use any kind of jam. In the future, I might try mixing the jam in with the cream cheese and see how that works. I used 1-1/2 tsp of Penzey's double strength almond extract and didn't think the almond flavor was overpowering.

Maple Whole Wheat Bread

I thought this bread was ok. Rose to the top of the bread machine. Maple flavor not overpowering. I agree with other reviewers who described the bread as lighter in texture or having more "fluff" which is probably why I wouldn't make it again. I found that the bread tore when I tried to spread cold butter on it, even when I had shaved off very thin pieces of butter. I much prefer the Buttermilk Honey Wheat Bread from this site.

Stuffed Green Peppers

I'm rating it 4 stars for the recipe as written. I've made it several times and the first couple times I goofed and added the tomato sauce to the rice/bean mixture. I also don't use sliced cheese but add shredded cheese to the bean-rice mixture. Of the two versions I've made, I like the one without the sauce mixed in (and I don't serve it on the side) better. In the future I may add some chopped onion to the filling.

Unbelievably Easy Slow Cooker Black Forest Cake

I didn't have any problems with this recipe--I didn't stir the butter/juice into the cake mix but simply poured it over. There were no unmixed portions. The cake part was densely chocolate and brownie like in texture. It was very good. Very good. I would make again.

Spinach and Tortellini Salad

I used the packaged spinach and instead of fresh tomates, used drained, diced canned tomatoes. I also made Italian dressing using Zesty Italian dressing mix. I think it would be better with fresh spinach so if I make it again will follow other reviewers suggestions and add fresh, uncooked spinach. I would also use fresh tomatoes and probably add a bit of onion.

Tuna Melts

Several other reviewers noted the extreme amount of mayo. I also thought it sounded excessive. Like another reviewer, I found 2 Tbsp. of mayo seemed to be sufficient. I used English muffins instead of French bread. I discovered after making the recipe, that I hadn't read it carefully enough--I sprinkled the mozzarella on top of the sandwich instead of mixing it in with the tuna. The next day I added about 1-1/2 c. cheese and discovered that some additional mayo was needed to bind it together. Another 2 Tbsp. seemed to do the trick. I found the mixture seemed a little flat--it needs something to spice it up, maybe some prepared mustard. I wouldn't make it again as is.

Vegetarian Reubens

I thought these were okay but nothing I would make again. A classic reuben calls for Swiss cheese, not smoked cheddar. I followed the recipe exactly but think it would have been better with the Swiss. Also, I question why the cheese is shredded and mixed with the sauerkraut and dressing--seems like a lot of extra work. Even though this recipe omits the meat, the procedure for making the sandwich could still be followed--put the dressing on the inside of the bread and then layer the cheese, sauerkraut and tomato. I may try it that way, using Swiss cheese.

Sugar Snap Peas

I put the peas and oil in a covered bowl and tossed a few times to coat the peas before putting on the baking dish. I didn't have shallots so used sesame seeds. I didn't put thyme on. I thought these were okay. I don't know if I will make these again.

Egg Salad Sandwiches

I thought this was very good--I like dill and didn't think it was overpowering at all but gave it a little different taste. Based on other reviews, I cut the mayo in half and that seemed to be just right. Also, I used fresh chopped onion instead of the onion flakes.

Jen's Heavenly Egg Salad

I've made this twice. The 1st time I discovered I didn't have any prepared yellow mustard so I used honey Dijon. The taste seemed a little bland--perhaps because the honey Dijon doesn't have the same bite as yellow mustard. The 2nd time I used yellow mustard as called for and there was a little more zip to the taste. I'm going to keep this recipe but plan to try others.
