Quinoa and Black Beans

This was amazing! Instead of frozen corn, I cut the kernels off of three cobs of fresh corn. The added crunch it gave the dish was out of this world. A keeper.

Breakfast Pies

These are awesome little breakfast bundles! You can substitute egg beaters, reduced fat crescent rolls, turkey bacon, and lite cheese. Then they come in around 100 calories. Gotta love that. My kids reheat them the nest morning, if any are left.

Mexican Rice III

A keeper! My mexican family laughs that I am the only person who can't seem to make rice. Well thanks to this recipe I now have my own delicious version. My health conscious husband couldn't help himself. He had thirds!!!

Slow Cooker Carnitas

Delicious!!! I have tried other slow cooker meat recipes and they all came out tasting like something from a can. This was moist and perfect. Use it in tacos, or for pulled prok sandwiches.

Chicken Soup III

Great clasic soup recipe! Followed ingredients except the celery seed (didn't have any). The cooking times were off as others noted. Chicken was cooked within two hours, broth took longer than two hours to cool to the point of removing the fat. I couldn't wait so I skimmed off some of the fat and left the rest. I added potatoes instead of noodles. My husband (the typical soup maker in our family had seconds). Thanks.

Acorn Squash

Delicious! Took the suggestions of others and microwaved a halved squash with a little water for 10 minutes. Then I popped them in a 350 oven for 25-30 minutes with the rest of the toppings. So easy, so tasty and a great wintery veggie.

Easy Slow Cooker French Dip

Super easy to make. I like that it didn't have that overtly italian oregano flovor. Worth trying a few cuts of beef to find your favorite. The meat is on the bland side but once you add the toasted butter rolls and provolone it was delish! Next time I will doctor it up a bit more. There will definitely be a next time.

Basil Tomato Soup

Filet Mignon with Rich Balsamic Glaze

Awesome glaze! Like several others, I grilled the filets seperately and used the basalmic vinegar combo as a glaze. I doubled both the basalmic and vinegar, added I teaspoon of minced garlic, and 1 tablespoon of brown sugar. It needs to boil to reduce to a syrupy glaze. It will also thicken more as it cools. The clincher is the bluse cheese. The combination of that tart cheese, with the sweet glaze is perfection. My husband asked me to bookmark this sauce while we were stille eating! This one is a keeper.

German Baby

Simply amazing! It doesn't get easier than this. I did almost everything "wrong" and still got perfect results. I don't have a cast iron skillet. I baked my in a large round ceramic baking dish. I didn't warm the ingredients first. I finished the batter before the oven was ready so it sat for several minutes. It still came out perfect. The presentation is beautiful. It looks like you have been slaving away. My mother absolutely loves the "dutch baby" from the Original Pancake House. This is a total knock off. It was awesome to be able to make this for her over the holidays. She said she liked mine even better than the restaurants. Thanks for the recipe!

Janet's Rich Banana Bread

Delish! Mashed the bananas and increased the amount used. Did not melt butter but softened to room temp. Use mixer to cream butter and sugar together. Also added bananas to the mixer to get them mashed and incorporated well. Everyone loved it!

Microwave Oven Peanut Brittle

The best! My husband has a much more time consuming family recipe that he has made for years. He didn't even want to try this quickie version. He reluctantly did and it came out perfect. Good bye family recipe, hello brittle in minutes! Perfect for gift giving. At the holidays, friends actually request it ~ usually with the nut of their choice... LOL!

Italian Sausage Soup with Tortellini

Update: 6/11 I used wine (as the recipe calls for) for the first time. HUGE difference. The flavor is much more rounded. Don't pass on the vino!! Family favorite! The only difference is I cook the tortellini seperately and once I serve it into bowls I pour the soup over the noodles. Then the noodles don"t sop up the broth or get mushy. I always cook a double batch and freeze some. Although my family fights over who gets the leftovers so sometimes it doesn't make it to the freezer. :).

Slow Cooker Turkey Breast

Wow! This seemed to simple to be possible. I used Knorr French Onion. It does give the bird a bit of a distinct flavor, but still delicious and moist and very tender. I think almost any good packaged soup mix would work, and give you tons of recipe options. I did rub butter in the bottom of the crock pot to prevent sticking, instead of adding any liquid. I put it on late so I cooked on high for 3 hours and on low for a few more. What an awesome lowfat alternative in the slow cooker. I may never put a chuck roast in my crock pot again. Simply genius!!!!!

Dry Rub for Ribs

Amazing! Be sure to 1) remove the membrane, 2) apply the dry rub, 3)marinade for 8+ hours, 4) cook 2 hours at 300. I cut each into two, or three rib sections. That way they are easier to serve to a group. I like to bake several racks at a time. Once they cool slightly, I pop them into food saver bags and freeze them in meal size portions. They are perfect for a quick summer dinner. I thaw them and reheat them on the grill with Sweet Baby Rays sauce. Delicious! In fact, I am going to go make a batch right now!!!

Garlic Prime Rib

Yummy! Super easy. The thyme is an awesome addition I never would have thought of. JENNLOREN's tips help a great deal. Plan for extra cooking time. It seems mine always takes a little longer than expected. This is pretty fool proof and an awesome way to wow carnivores at your next dinner party!! Thanks Chef Mike!!!
