Hot Apple Cider

Reviewed: Oct. 25, 2014
Took this to a pot luck and people went crazy. I used a gallon of cider and adjusted the recipe accordingly. My only change was less citrus. I used 1/2 of the peels suggested in this recipe.

Carrot Rice

Reviewed: Jun. 26, 2014
Amazing! I made this twice. The first time was for a dinner party. I made the recipe as closely as I could given my ingredients on hand. I substituted 3/4 tsp ground ginger and honey roasted peanuts. I served it with Vindaloo Chicken. It was delicious and got rave reviews. The rice is on the dry side, perfect for the sauce of the indian dish I paired it with. The second time I made this I followed review suggestions to moisten it up a bit and toss in 1/2 tsp of Better than Bullion and a small amount of water when steaming the carrots. The result when combined in the final stage was a mushy rice mix than I didn't care for. The flavor profile was still great but the beauty of the recipe is getting a nice flavorful rice that flakes and not clumps. This recipe is awesome exactly the way it is. Hope that helps!

Wonderful Waffles

Reviewed: Mar. 23, 2014
Crispy outside, fluffy inside. Worth the extra time to separate the eggs, etc. I added 1.5 teaspoons of vanilla and a generous pinch of cinnamon. They could have been a little sweeter. The waffle itself becomes all about the texture as it doesn't have very much flavor. My kids loved them and until I find something better this will be my go to recipe. The recipe made 10 ~ 7" round waffles. Four served as breakfast and another six went into the freezer. Make sure you freeze them on a cookie sheet then transfer them to a freezer bag once they are hard, otherwise they will squish and you will have frozen pancakes and not waffles.

This was very good. Not amazing but certainly worth using as a base to tweak to your liking.

Marinated Pork Tenderloin

Reviewed: Jan. 26, 2014
Delicious. This definitely is on the sweet side. Reducing the marinade and making a sauce is a must. I seared the tenderloin in a cast iron skillet and then tossed the whole thing in the oven to finish cooking.

Sliced Watermelon Jell-O® Shots

Reviewed: Jul. 21, 2013
A huge hit! They came out perfect. The video is essential on how to make them. You do need to turn the rind inside out to remove all of the pulp and skin. Once you get the hang of this it is relatively easy. Lime rinds are pretty tough. I used 13 limes and all but 1 came out perfect. A 3oz. box of jello filled 10 halved limes (so 40 wedges). I put cupcake liners in a muffin tin and placed a lime half in each well. You can lean them against the edge to keep them level. I made them the night before and let them set up all night. To cut the halves into wedges you need to turn the lime face down so you cut through the rind first and don't destroy the jello. I used Pucker (watermelon flavored vodka). For me they were a little strong. I made these for a club party and everyone loved them. I had people following me around to try to steal seconds and thirds. They are time consuming but were the hit of the party. Without liquor they would be a great party treat for kids. I am pretty sure people will be begging me to make them again and again!!!

Polvorones de Canele (Cinnamon Cookies)

Reviewed: May 23, 2012
These are awesome. My go to recipe whenever my daughter needs to bring something to Spanish class. I always double the recipe. I also use a small cookie scoop to make sure the size is consistent. Make 1/2 or even 1/4 of the amount of sugar called for to roll the cookies in. I also put the dough in the frig in between batches because the warm butter gets pretty soft.

Irish Soda Bread

Reviewed: Mar. 10, 2012
Wonderful Irish soda bread recipe. This is more like a cake than the super dense scone-like bread you might be used to. The caraway seeds while authentic are overwhelming to me and I will eliminate them next time. I also plumped the raisins before using. Put raisins in hot water for 5 minutes. Then strain and dry slightly before adding to the dry ingredients. I didn't have a skillet so I made it in a Calphalon 9" cake pan. It came out perfect. I made a second recipe and put it in 4 smaller baking dishes so I could give them to neighbors. They baked nicely but the crust did not come out as beautifully in a ceramic dish as it did in the Calphalon.

Wow! We found the horseradish very overwhelming. My step father loved them and polished way too many off but no one else would touch them. If you love horseradish or you have nasal congestion this is the recipe for you.

Garlic Prime Rib

Yummy! Super easy. The thyme is an awesome addition I never would have thought of. JENNLOREN's tips help a great deal. Plan for extra cooking time. It seems mine always takes a little longer than expected. This is pretty fool proof and an awesome way to wow carnivores at your next dinner party!! Thanks Chef Mike!!!

Italian Sausage Soup with Tortellini

Reviewed: Apr. 12, 2011
Update: 6/11 I used wine (as the recipe calls for) for the first time. HUGE difference. The flavor is much more rounded. Don't pass on the vino!! Family favorite! The only difference is I cook the tortellini seperately and once I serve it into bowls I pour the soup over the noodles. Then the noodles don"t sop up the broth or get mushy. I always cook a double batch and freeze some. Although my family fights over who gets the leftovers so sometimes it doesn't make it to the freezer. :).

Marinated Flank Steak

Reviewed: Mar. 29, 2011
Great base for your own marinade creation. We like to use flank steak for fajitas and so I needed to alter this recipe a bit. My alterations include 1/4 cup oil, 1/4 cup basalmic vinegar, 1/8 cup soy sauce, extra garlic. Otherwise the soy sauce is overwhelming and the marinade tastes asian. Whole family loves it with this changes and this is my go to marinade for flank steak on the grill.

Janet's Rich Banana Bread

Delish! Mashed the bananas and increased the amount used. Did not melt butter but softened to room temp. Use mixer to cream butter and sugar together. Also added bananas to the mixer to get them mashed and incorporated well. Everyone loved it!

Banana Banana Bread

Reviewed: Mar. 5, 2011
Tried this based on the amazing reviews. Don't know what the fuss is about. I found it rather bland. Reviewers suggested adding more spices. It is VERY dense which reviewers also warn about. Sorry. I will keep looking for a banana bread recipe.
