Black Magic Cake

This truly is the perfect chocolate cake! I'll be making this for many birthdays and events in the future :o) I followed the recipe exactly, even using sour milk (2 T. of vinegar to 1 cup of milk) for the buttermilk and it turned out perfectly. Thanks so much!

Caramel Macchiato Cheesecake

Amazing cheesecake! I took a chance and did not do the waterbath and it turned out Beautifully!! I've made a lot of cheesecakes and this is probably the prettiest one I've ever baked. I'll be posting a picture shortly. I did make sure to leave it in the oven for the recommended amount of time after baking to prevent cracking. I followed this recipe to a "T" and I wouldn't change a thing in the future. It tasted even better the second day after baking! I'll make this one again and again. Thanks for posting!

Zippy Summer Shrimp

I'm embarrassed to go against all the five star reviews, but I didn't like it nearly as much as regular scampi. I think it needs to have at least half butter/half olive oil to be five star. I followed the recipe to a "T" even adding a little more basil for flavor but then we tasted it and found it to be bland so we added garlic salt and old bay seasoning to up the flavor. I might make this again sometime with the addition of butter. Thanks for posting, I'm always looking for new ways to use fresh basil.

Too Much Chocolate Cake

This is a great recipe, almost exactly the same as "Easy chocolate chip pound cake" which I have been making for years. The only difference I can see is that the other recipe uses yellow cake mix and only 3/4 cup of oil. Highly recommend reducing the oil in this recipe to 3/4 cup instead of a whole cup! This cake is easy to make and is always a hit anywhere I take it. REVISION: The other cake only calls for 1/2 cup chocolate chips and this one says use Two Cups!! I can see now why it's called Too Much Chocolate Cake! LOL

Cheesy Ranch New Red Potatoes

How can you go wrong with this recipe? It's like a shortcut recipe for restaurant style potato skins without the work! We thought it was delicious. The only thing I added was a sprinkle of real bacon bits on top of the cheese before baking. Yum!! Next time I think I'll add green onions as a few others have suggested.

Seafood Sandwich

This is great for a refreshing & low calorie lunch as long as you use low fat mayo and spray butter like I did! I used 1/4 cup chopped regular onion and added a stalk of celery chopped (very crucial!) and also doubled the old bay seasoning. The lemon juice is very important to the light flavor that this seafood sandwich needs. It really is very good even though I only had time to let it sit for 10 minutes instead of the recommended 30. I bet it will taste even better tomorrow! I think this would taste great on crackers or even just on crunchy romaine lettuce too! I served it on a toasted hot dog bun with a couple of pieces of lettuce :o)

Sour Cream, Cucumber and Dill Dip

This is delicious for sure & Perfect for summer. I added freshly ground pepper and garlic powder and also used sea salt. Don't skimp on the lemon juice, it adds such a nice *zing* I took another's advice to squeeze the shredded (unpeeled) cucumber between paper towels and this worked perfectly to keep it from getting too runny. I served this with carrots, celery and cucumber slices. Yummy!! I'll make this often. Thanks!

Jacky's Fruit and Yogurt Muffins

Awesome recipe, such pretty golden brown muffins! I made half a batch and ended up with nine nice sized muffins! I used strawberry yogurt and fresh blueberries from our own bushes and also used a whole egg. Other than that, I followed the recipe exactly and I'm glad I did! It was perfect. Next time, I want to try lemon yogurt with blueberries since those flavors work so well together! I'll make this easy and low calorie recipe often.

Eggplant Sandwiches

I wanted to try this recipe but didn't expect to love it as much as I do!! I used cooking spray instead of olive oil and after a few minutes when I checked the status of the broiling eggplant, it looked dry so I sprayed some italian dressing on each slice. I also just sprinkled garlic salt on the rolls spread with mayo instead of mixing it together so I wouldn't have any wasted garlic mayo sitting around! I will make this again and again. We didn't even miss the meat!

Shrimp Scampi Bake

Mixed reviews here, I would think that something with this much butter would be excellent. It was really a splurge to eat a dish with so many calories on a Tuesday night and I don't think the scampi was worth it! I increased the garlic and added a splash of wine as per other reviews and that didn't add much flavor. After a few bites, my hubby suggested we sprinkle some old bay on it so that was my first clue that he wasn't a fan of this dish either. It tasted ok but I would probably not make it again. I had shrimp fresh off the boat since I live in Coastal GA. so I know that wasn't the problem! BTW: Everyone is different so if you decide to try this out, Do Not cook as long as the recipe states unless you want rubber shrimp!

Good for You Greek Salad

I absolutely adore this salad! I don't think it would be the same if you didn't have fresh tomatoes and cucumbers so it should probably only be enjoyed in the summer. It didn't even take me fifteen minutes to throw this together and it was delicious! I took others advice to reduce the olive oil and add red wine vinegar to cut down on calories and also used a vidalia onion and NO olives because I hate them! I bet this will be even better as leftovers since the flavors will have more time to combine. Yummy! I'll make this often since I have a surplus of tomatoes and cucumbers. Note: I only sprinkled the feta on each individual serving so the leftovers will still taste fresh.

Eggplant Tomato Bake

I give this five stars as a healthy food rating! It could of course be more delicious if it wasn't so low calorie but this is a great week night side dish or main meal if only serving two people. I added garlic salt, pepper and fresh basil from our garden. I will definitely make this again when I have fresh eggplant available. Thank you for an easy and low calorie dish!

Eggplant -- Easy, Good and Tasty

Very good and low calorie too! Followed the reviews to add garlic to the egg mixture and cook the eggplant without the topping for ten minutes. After flipping them, I added the topping and cooked for another 5 minutes then broiled for 4 minutes to melt the Parm cheese. Also used cooking spray on the pan instead of oil and used italian bread crumbs for the eggplant. The only other change I made was marinating the tomatoes in the Italian dressing while the eggplant roasted and adding some chopped fresh basil to compliment the tomatoes.

Sarge's EZ Pulled Pork BBQ

This really is *EZ* and very delicious too! I cut it in half the night before cooking and rubbed it with the salt, pepper and also some fresh minced garlic then put it in the fridge in a gallon size ziploc till the morning. I put it in the slow cooker before work and only used the beef broth but it was still very moist and flavorful! Next time I will add the coffee too since the last reviewer says that adds another depth to the flavor! Thanks so much Sarge! I can't believe something so simple with so few ingredients could smell so great while cooking and taste even better!! This will be a regular meal in our house. FYI: Next time I'm planning to add a little liquid smoke also to make it taste even more authentic.

Easy Banana Brownies

Easy? Yes Tasty? Not really :o( I love frozen chocolate covered bananas so I figured this recipe would suit me very well. It was kind of gummy (weird texture) although it certainly was quick to throw together. I used a 9 x 13 pan and doubled the recipe for a church function and only a couple of pieces were eaten. Kind of a waste in my opinion. Oh well, quite a few other reviewers liked this so maybe it's just me! PS: Didn't have any semi sweet chips so used milk chocolate chips, could this have been the problem?

Basil, Tomato and Mozzarella Sandwich

Very good! I used two 100 calorie english muffins for this and it worked out perfectly for hubby and I since they're round and the same size as tomato slices! I also love balsamic so it was a great version for me! I might try it with italian dressing next time and also broil it to melt the cheese. Yum, Yum!!

Eggplant and Zucchini Casserole

Perfect summertime recipe using fresh eggplant and tomato! I didn't use the stuffing as I wanted a lighter tasting dish. Instead I layered panko bread crumbs between the layer of vegetables and cheese (vegetables, bread crumbs, cheese times two) I also added minced garlic to the vegetable mixture while it was simmering and cooked a little less than the recommended 15 minutes so there would be liquid for the bread crumbs to soak up. I took another reviewers advice and used freshly sliced mozarella cheese and parmesan instead of the colby jack. This smelled wonderful while cooking and tasted even better!! I can't wait to make it again when I get more fresh eggplant from the garden!!

Summerly Squash

Really great recipe! I'll make this again and again! I sauteed minced garlic with the onion, used fresh minced basil and left out the bay leaf. I'm very glad to find this simple, delicious and low fat dish. Oh yeah and I only had zucchini so it was just zucchini, onion and fresh tomatoes, but I'm sure squash would be the same.

Baked Maryland Lump Crab Cakes

10+ Stars! I'm so excited to find a recipe that is not fried! I will be more likely to make crab cakes at home now that I know that I can do it without using oil. I will add another 2 Tb. of bread crumbs next time (I used Panko) add some lemon juice and maybe cut down on the old bay a little since it seemed to overwhelm the crab flavor a little bit. My hubby also sauteed 1/4 cup of onion with minced garlic in a skillet to add to the mix and I'll definitely do this again next time! Also took other reviewers advice to chill for 30 - 45 minutes before baking. This made four giant patties, but next time it will be 5 or 6 patties so it cooks in the time allotted. We broiled it the last 5 minutes so the cakes would have crispy tops. Yummy!!

Blueberry Zucchini Bread

This is one of my favorite breads to make every summer. Next time, I will take other's advice for 1/2 cup applesauce and 1/2 cup oil since the calorie content is quite high! I hope it works out :o)
