Jazzed-Up Gravy

Reviewed: Dec. 17, 2008
I jazzed this up a little more by adding celery when I sauteed the onions and a can of chicken broth to make it go farther. I also added flour to thicken it up once I added the chicken broth. All in all, not a bad gravy for when you fry a turkey at Thanksgiving and don't have pan drippings for homeade gravy!

Original Chex® Party Mix

Reviewed: Dec. 16, 2008
I make this the old-fashioned way, cooking it at 250 degrees for an hour and stirring every fifteen minutes. I also double the worcestershire and add 2-3 tablespoons of hot sauce, yum!!

Curried Quinoa

Reviewed: Dec. 16, 2008
This was my first experience with quinoa and I'm very excited about how it turned out! Such a simple and yummy recipe that we really enjoyed! I followed the directions exactly except for using two tsp of regular chili powder since I didn't have ancho. I will definitely be making this recipe again and again, Thank you!

Sauteed Apples

Reviewed: Dec. 6, 2008
This recipe is great! I followed it exactly and even though my apples were a little old, it was still delicious. We ate it plain and on ice cream, Yum! I can't wait to try it on waffles or pancakes! Thanks a lot for this simple and yummy recipe

Turkey Tetrazzini II

Reviewed: Dec. 5, 2008
We loved this recipe!! I love that it makes such a creamy sauce without the use of canned soup! I reduced it to four servings and added minced garlic, sauteed onions & mushrooms and a can of mixed vegetables although I really wanted to add frozen peas instead but didn't have any in the freezer :o( Next time I will try adding the peas for sure! We ate this for dinner and then polished off the leftovers for lunch the next day! Yummy

Apple Crunch Pie I

Reviewed: Dec. 4, 2008
My hubby and sister said that this is the ultimate apple pie and I should never use any other recipe!! I changed nothing this time, but next time I will cut the topping in half because it boiled over onto the baking dish that I (luckily) had underneath the pie! It was way more topping than necessary and I actually had to throw some away! I just sprinkled it on top instead of patting it down and the presentation was gorgeous. My sister ate it warmed in the microwave with butter pecan ice cream, yum! Thanks a lot for this easy and delicous recipe

Grandma's Fresh Apple Cake

Reviewed: Dec. 4, 2008
Wow this cake/bread is wonderfully delicious! I can't believe how easy it was to make & it didn't last more than two days in my house! Didn't change a thing except for leaving out the raisins. Thanks so much, I will be making this for years to come!

Campbell's® Green Bean Casserole

Reviewed: Nov. 24, 2008
Gotta give this recipe credit for being super easy when you are busy working on other things like the main course! I followed the recipe exactly except for reducing the milk to 1/2 cup and adding a sauteed yellow onion for more flavor. It's still missing *something* but I haven't discovered what it is yet! I will keep experimenting till I figure it out because it is nice to have this easy casserole for the holidays!

Awesome and Easy Creamy Corn Casserole

Reviewed: Nov. 24, 2008
I really wanted to like this recipe a lot because of the simplicity. It just didn't do it for us, less than half of the casserole was eaten at the end of our giant family gathering. I followed the recipe exactly, but my hubby said that he would probably like it more if I added some sugar. It wasn't really like a casserole at all in my opinion, just sort of a glorified cornbread. It was very easy though so that's a good thing when the holidays come around! FYI: I had to bake it for 55-60 minutes although I didn't double the recipe so make sure to allow extra time for that!

Bean Soup With Kale

Reviewed: Nov. 21, 2008
We loved this simple and delicious soup! My hubby came home from work and immediately asked about the wonderful smell all throughout the house! I followed the recipe very closely, but I did substitute a can of tomatoes for the fresh and added extra kale since I had no fresh parsley available. So yummy! We will be making this for years to come, thanks so much for sharing this recipe!

Baked Kale Chips

Reviewed: Nov. 19, 2008
My hubby looked at me like I was crazy when I started making this! LOL We both really liked the finished product. I used butter flavored cooking spray because it seemed easier than spreading the oil around and also used garlic salt which we really liked! The only hint I can offer is to watch this very, very carefully toward the end of the cooking time because I think just thirty seconds past "crispy" is another term..."crumbly" Into tiny pieces that are messy to eat :o)

Libby's® Famous Pumpkin Pie

Reviewed: Nov. 13, 2008
I love this recipe! It's the one my family has used for years. The only change I make sometimes is to add more spices, but it's great either way. I might try the suggestion of adding a little flour to the filling and leaving out the crust some time since I don't care for the crust part anyway!

Best Black Beans

Reviewed: Nov. 13, 2008
This recipe is great as is! No changes are necessary :o) Just for the heck of it, I added a splash of lime juice as one reviewer mentioned and I liked the tang, but I think it would be just as good without it! Thanks for a simple and delicious recipe

Sour Cream Chicken Enchiladas

Reviewed: Nov. 13, 2008
I'm so excited to have this recipe, thank you! It's unbelievably authentic which is hard to find! I only changed the recipe because I couldn't find some of the ingredients :o( I bought green salsa which has jalapenos and tomatillos instead of green chiles so I added a can of diced green chiles to the mix. The only way this seemed to affect the recipe was to make it very hot since I had jalapenos in both kinds of salsa I used!! I will make this again without a doubt but will continue my search for green chile salsa :o) Note: I sauteed the onion and used three chicken breasts to make eight large flour enchiladas instead of 12 small ones, Yum!

Feta Cheese and Bacon Stuffed Breasts

Reviewed: Nov. 7, 2008
Wow! This is going in my favorites file at home! I used 1/4 cup olive oil and two tablespoons of lemon juice for the marinade mixture and let it marinate for five hours in the fridge. I stuffed it with crumbled turkey bacon and feta and cooked it for exactly 30 minutes at 350. It smelled great and tasted even better! FYI: It was also fork tender which hardly ever happens with chicken! Try this recipe & you won't be disappointed especially if you have time to let it marinate for a while.

Black Halloween Punch

Reviewed: Nov. 3, 2008
This tasted quite strange to the adults at the party, but the kids loved it and that's who it's for, right? LOL It also had an awesome bubbly effect when the ginger ale was added so that was cool for Halloween too. Thanks for the recipe!

Apple Strudel Muffins

Reviewed: Nov. 3, 2008
Well...many of the reviews were right about one thing, they were Very dense. I guess because there is no oil in the recipe? I grated a cup of apples and chopped the other half cup and that's the only changes I made so I know it wasn't anything I did differently. Anyway, the smell of them cooking was amazing and the topping was awesome but they were way too chewy and hard to bite through in my opinion. I got some compliments on them but I noticed that everyone was drinking a lot of juice while eating these muffins! LOL

Pork Chops with Stuffing

Reviewed: Oct. 31, 2008
Wow, Love this recipe! I had four large chops that completely filled up the 9x13 pan so I used a whole box of stove top stuffing and sauteed onions, celery and portabello mushrooms to mix in. I followed the rest of the recipe exactly and baked for 45 minutes. My hubby couldn't get enough and said it rivaled his grandma's recipe!! Thanks so much for this awesome and easy way to make pork chops!

Spicy Grilled Shrimp

Reviewed: Oct. 28, 2008
Not sure I would make this again. I used a sea salt grinder and I followed the recipe with no changes at all. I thought it would have a lot more flavor than it did. I love spicy food, but this was just *spicy* there was no depth to the flavor. I couldn't even taste the minced garlic. Pretty disappointing since we used fresh caught local shrimp for this recipe. I'll keep looking, thanks

Cranberry Apple Muffins

Reviewed: Oct. 27, 2008
I really really liked these muffins! I used diced apples (not shredded) straight from a North Carolina orchard, 1/3 cup less sugar than called for and dried cranberries instead of fresh. I also didn't have any coriander so I left that out. These are so great and pretty healthy too! Don't bake them as long as the recipe says or they will be very dry!! I cooked for twenty minutes at 375. I might bake at 350 next time instead of 375 to see how well they turn out since that's the more standard temp for baking. Give these a try!!
