Almond Sole Fillets

I would never microwave fish but I liked the ingredients so I used the oven version of this. I toasted the almonds in a pan with crisco cooking spray before I baked the fish at 375 for 20 minutes like other reviewers stated. In the future, I will start checking the fish at 15 minutes depending on the thickness of the fillets. I did love the taste and so did everyone else, even though I reduced the amount of butter ;o) I doubled the dill weed and paprika and used garlic salt instead of regular salt. Next time, I might use creole seasoning instead of or maybe in addition to the paprika for a little extra kick :o)

Crispy Cucumbers and Tomatoes in Dill Dressing

This is great when made with fresh from the garden ingredients in the summer. A dish is only as good as the sum of it's parts :o) I probably wouldn't make this in the winter since the tomatoes need to be prime. I doubled the ground pepper and dill weed and used olive oil as many other reviewers did. I also used green onion but this would be great with vidalia or red onion as well. After letting it sit 15 minutes as the recipe describes, I tasted it and decided to add garlic salt. We really enjoyed this and I will definitely make it again.

Creamy Dill Dipping Sauce

Awesome recipe! I used Greek yogurt in place of the sour cream to save a few calories. I also used 2 tsp dried dill although I bet it would be even more flavorful with fresh! As per other reviews, I added 1/2 tsp of garlic powder and after mixing it all together, put in refrigerator for three or more hours to allow the flavors to blend. Yum! This was great with salmon, but I will also try it with crab cakes, tuna and as a dip for vegetables since it is easier, cheaper and healthier than ranch dip. The possibilities are endless with this recipe, maybe even on beef or turkey burgers in place of plain mayo!

Speedy Salmon Patties

Yummy recipe! Brings back memories of my childhood :o) Super quick and fairly healthy since I used a bit of canola oil and cooking spray instead of butter. I added three more crackers and minced garlic as other reviewers mentioned. I also used a lot more Worcesterchire sauce as I remembered my mom did "back in the day" This recipe is great and I will use it as a reference many times in the future. Thank you!

Jay's Jerk Chicken

Love, Love this recipe!! I used all green onions since I had plenty of them. I didn't have a fresh jalapeno so I chopped some pickled jalapenos instead. The only other change I made was adding minced garlic. Can't have to much of that! I used my magic bullet blender for this so it didn't take any time at all to mix it up. I was only able to marinate this for two hours and it was still full of flavor! I also heated the leftover marinade on the stovetop and poured it over the chicken after it was grilled. Yummy! FYI: Next time, I will mix an extra serving of the dry ingrediants and sprinkle it on the chicken as I grill it like they do at Bahama Breeze :o)

Jen's Heavenly Egg Salad

I used all regular yellow mustard because I am not a big fan of dijon mustard. I loved the addition of using lemon juice in this. It added such a nice, bright flavor! This recipe can easily be customized to suite anyone's taste. I made it according to the recipe, tasted it then decided to add black pepper, dill weed, celery seed and a little bit of dill relish. This is SO yummy and I will make it many times in the future since DH is such an egg salad fan. Thank you for sharing!

Egg and Hash Brown Pie

This is a great recipe, very versatile. I did take the suggestion of other reviewers and cooked my hashbrowns with the green onions in some of the bacon grease before layering them on the bottom of my casserole dish. I don't think we would have liked this at all if the hasbrowns weren't cooked first. I also jazzed this up with garlic, extra onions and various other seasonings. I will probably make this again, but maybe use ham next time instead of bacon.

Pepperoni Dip I

I liked this dip, but it didn't go over well at our Super Bowl party. I guess people would rather just eat "real" pizza! LOL I followed the recipe other than leaving out the bell pepper. I have tons of dip leftover :o(

Best Beef Stroganoff

This was pretty good, but I wouldn't really call it "the best" It never really thickened up like stroganoff usually does even though I used 3 T of flour. I added worcesterchire, onion powder and freshly ground pepper while I was browning the meat to add more flavor and I will definitely do that again. Also, using portobello mushrooms was nice because they are hearty and rich tasting. I will probably make this again since I like that I can make it even if I don't have a can of cream of mushroom soup handy. So many other recipes use that and it's nice that this one uses all fresh ingredients. I also liked the kick that fresh lemon juice added. I have a recipe that uses red wine vinegar instead and it was also good that way.

Oven-Roasted Vegetables

This is an awesome and versatile recipe. I just use whatever vegetables I have available. this time it was squash, bell pepper and a vidalia onion. I used herbes de provence and red wine vinegar also to cut down on the amount of olive oil I needed. I also didn't have to bake it for more than twenty minutes.

Eggplant Parmesan II

I made half this recipe for just DH and me. I read lots of reviews before making it but didn't change it drastically! I did cut the eggplant into 1/4" slices and sweat them with salt in a colander for 30 minutes before baking. I baked for ten minutes per side at 350. I didn't have Italian breadcrumbs so I made my own using Panko breadcrumbs, Parmesan cheese, garlic powder, oregeno, salt and pepper. I think it turned out great although next time I will try to make sure I have Italian breadcrumbs to cut down on the work! ;o) I had fresh mozzarella and minced fresh basil that needed to be used so I'm sure that added another dimension of flavor! One last thing, don't skimp on the pasta sauce. I know it seems like a lot but it really is the perfect amount. If you use less than the recipe calls for it will probably be dry by the time it is heated through.

Tomato Zucchini Casserole

Everyone loved this casserole! Like other reviewers, I substituted fresh basil and mozzarella. I actually had fresh mozzarella which I sliced and used only in the middle layer. Yum! I also used more onions than called for in the recipe and squash since that's what I had available. This was a delicious, low calorie (I didn't use the butter) and versatile recipe that I will use again and again. I got many compliments on this one! Thanks DeltaQueen :o)

Perfect Cheesecake Everytime

Absolutely perfect cheesecake! This is simple, elegant and delicious. I've never made an easier cheesecake. I followed the recipe exactly and I loved the thickness of the crust. Not to thick, not to thin, perfect :o) I didn't have any pecans, but since that was optional I wasn't worried about leaving them out. I forgot to put the cinnamon in the crust so I added it to the filling and everyone loved it! Most people coldn't quite figure out what it was that made the filling unique. I was a little nervous about the cooking method but excited to turn the oven on for only 30 minutes in the heat of summer for this recipe! After leaving it in the oven for six hours to cool down it was perfectly cooked without a single crack! I can't say enough about how much I like this recipe. In my opinion, it's so much tastier than the heavy, dense NY style cheesecake. It was a hit with the birthday girl too! :o)

Mexican Corn on the Cob (Elote)

Very, very good recipe for fresh corn! I had this twice at parties before deciding that I had to learn how to make it on my own :o) I did use other reviewers recommendations (the most popular ones) and used parmesan cheese just because I already had it and didn't want to buy the cotija cheese just for this recipe. So yummy! I'll use this one again many times. Thank you! Oh yeah, I did leave the corn in the husk after cleaning off the silks so I wouldn't have to worry about burning/charring it too much.

Blueberry Cream Cheese Pound Cake I

Amazing! This recipe is so decadent and rich tasting. I made it to use as a dessert, but after tasting it I realized that it would be much better as a coffeecake for breakfast. This recipe tastes so much more complicated than it is! I used extra blueberries, but I think 1 1/4 cups would be just fine. I also added more vanilla extract. We ate this for three days and heated individual servings in the microwave to make this even more scrumptious :o) This cake is great and I will be making it many times in the future. I had two peope ask me for a copy of this recipe!

Bacon for the Family or a Crowd

I love this recipe! I use it all the time when my family comes from out of town to visit. I always cook it at 400 or 425 degrees depending on how rushed I am! LOL I never bother to turn the bacon or drain the grease while it is cooking. As long as you use thick, good quality bacon you shouldn't have a problem with leaving it unturned. I hardly ever made bacon for a crowd before I found this recipe because it was so much hassle. I love that I can do it this way now! FYI: A friend told me that this is the way she has always seen restaurants make bacon. Guess that's why bacon on cheeseburgers in restaurants is always so yummy and crispy!

Cheesy Sour Cream and Salsa Dip

I had this for the first time when a friend brought this dip to a cookout and we enjoyed it. It is an easy and inexpensive dip that is perfect with vegetables, crackers or chips. We hate olives so I leave those out and add onions instead. I will try adding hot sauce, garlic powder, etc. to kick the flavor up a notch and maybe even heat it up so the cheese is melted. I think it would be even better that way! Note: She used the whole package of ranch seasoning and I do too. This might be helpful to those who complained of the dip becoming too runny. I wouldn't drain the Rotel tomatoes because you lose so much flavor that way!

Scott's Savory BBQ Sauce

My new favorite BBQ sauce!! I made this to serve with smoked boston butt for our July 4th party this year and it was fabulous! Some people don't like vinegar based sauces, but it is my favorite and my hubby's favorite as well! I love that it has the vinegar bite of North Carolina type sauce, but also has some ketchup to thicken it up a bit so it sticks to the meat better. As I'm writing this review, it is making me hungry for more! I didn't change a thing, but it would be easy to increase or decrease the heat or sweetness according to your own taste buds :o) Thanks Scott!!

Magic Cookie Bars from EAGLE BRAND®

Love these bars! They are So rich and a little goes a long way. I think these are one of my Dad's favorite desserts and I always make them for Christmas to give away. I like to use one cup of chocolate chips and one cup of butterscotch chips. Yum!!

Modenese Pork Chops

I used fresh rosemary and I was afraid of it being too strong but next time I will know to add more! My hubby is a big fan of lots of flavor so once I realized this is a recipe with subtle flavors, I added garlic salt and greek seasoning to the chops while they were browning. This recipe is great, the wine and rosemary really give the pork chops a nice flavor and if you get thick chops and simmer them 15 to 20 minutes, they are really tender too! I added chopped onions and portabello mushrooms and turned the sauce into a gravy by adding cornstarch after everything was cooked. Next time, I will double the sauce because it was so yummy!! We enjoyed this very much, thanks.
