Pineapple-Lime Rice

Very good. Unfortunately I didnt have cilantro (thought I did when I started) or fresh lime for zest. It still was very tasty using concentrated lime juice. Can't wait to try again with cilantro & zest. I may add a little more green onions. Ate with teriyaki chicken.

Basil Tomato Soup

very tasty.... I used 3 T butter & 1 T sugar as suggested, also adjusted the cream to 3/4 C cream (what I had in the fridge) with 1/4 C fat free half and half. also saute'd onions and garlic as others suggested and added it while simmering -2nd time I made...couldn't find fresh basil -so I used approx 1 1/2 t dried - also used 1/2 heavy whipping cream and 1/2 half fat free half and half...still good!

Cranberry Sauce Chicken II

LOVED this chicken. As per other users, I mixed the sauce up early and stuck in the refrigerator. I was running short on time when it came time to acutally bake -so cut up chicken in bite sized pieces (I used 5 boneless skinless chicken breasts since I'm not crazy about dark meat)....then I tossed the chicken in the sauce until well covered. I poured the entire mixture in a 9 X 13 sprayed with Pam and baked uncovered for 45 minutes. It was delicious! We ate it over brown rice and served with green beans and a salad. I've already bought more Russian dressing and cranberry sauce (with whole berries!) to keep on hand for the next time I'm ready to throw this quick and easy recipe together.

Grilled Pizza Wraps

These were yummy! I made them on my quesadilla maker, sprayed with Pam(thus I didn't butter my tortillas)laying one tortilla down, then the filing and then another on top (rather than folding over). I cut them with a pizza cutter. i also added jalapenos and bellpepper, but you could add any pizza toppings that you like.

Cantonese Dinner

My hubby and I LOVED this recipe! I took others advice and doubled the sauce - left off mushrooms since I don't care for them. I added bell pepper and a drained can of pineapple chunks. Next time I'm going to use tidbits - served over white rice and it was DELICIOUS! (I want to try with chicken too)

Caramel Apple Pork Chops

YUMMY! In trying to make it lower in fat and sugar - I cut out the oil and just browned in a skillet with Pam. I used Brown sugar Splenda in place of the brown sugar (and did double the sauce & apple ingredients). I cooked the sauce and apples in the same skillet that I browned the pork chops and after they were tender - I added the pork chops back in, stirring to coat with sauce (and to warm). We LOVED it! I will certainly be making this again.

Best Ever Crab Cakes

These were delicious. I had a pound of fresh crab meat - so i doubled the recipe. Didn't have tarragon, so added some Tony's cajun season - added a little onion and garlic powders. i made 8 crab cakes and broiled 4 of them on a stonewear baking sheet sprayed with cooking spray - cooked the other 4 as directed in skillet with butter and honestly couldn't tell the difference ...both great. i did roll a couple in Panko bread crumbs before placing in skillet and those had a nice crunchy outside - but not any better -just different. GREAT recipe...thanks for sharing

Ham and Pineapple Dinner

SUPER EASY AND SUPER QUICK MEAL. I bought 1# of Virginia Baked Ham at the grocery store deli when it was on sale and cubed it for this recipe. NOTE: there is not enough pineapple juice in the can of chunks - you will have to add real juice or open extra pineapple - I stir fried the ham, pineapple and onions till they started to brown - which made it have more of grilled taste. We ate it over white rice and it was delicious!

Sweet Baby Carrots

YUMMY! After reviewing other notes..., I decided to decrease the amount of sauce - I used 3 T butter, 3 T Brown Sugar & 1 T honey with a dash of cinnamon... I steamed 1 pound of baby carrots since we like prefer our carrots a little less done for about 10 minutes and then tossed them in the sauce. They were delicious!
