Sweet Baby Carrots

YUMMY! After reviewing other notes..., I decided to decrease the amount of sauce - I used 3 T butter, 3 T Brown Sugar & 1 T honey with a dash of cinnamon... I steamed 1 pound of baby carrots since we like prefer our carrots a little less done for about 10 minutes and then tossed them in the sauce. They were delicious!

Ham and Pineapple Dinner

SUPER EASY AND SUPER QUICK MEAL. I bought 1# of Virginia Baked Ham at the grocery store deli when it was on sale and cubed it for this recipe. NOTE: there is not enough pineapple juice in the can of chunks - you will have to add real juice or open extra pineapple - I stir fried the ham, pineapple and onions till they started to brown - which made it have more of grilled taste. We ate it over white rice and it was delicious!

Patricia's Green Chile Soup

Delicious soup - reminds me of Chicken enchiladas. Both of my teenagers loved it. I doubled the recipe thinking it didn't seem like much, but it is so rich, I think the proportions are probably about right for each serving. We love spicy, so I added some diced jalepenos.

Molasses Baked Chicken

I used boneless skinless chicken breasts and cooked in the crock pot for about 8 hours. After 4 hours, I added 3 think sliced peeled apples and a sprinkling of chopped walnuts. As someone else mentioned, I added 1 extra T of molasses. LOVED THE APPLES & NUTS in the sauce! the sauce was great -but my chicken was a little dry...next time I'm going to try following the recipe and cooking it in the oven.

Cantonese Dinner

My hubby and I LOVED this recipe! I took others advice and doubled the sauce - left off mushrooms since I don't care for them. I added bell pepper and a drained can of pineapple chunks. Next time I'm going to use tidbits - served over white rice and it was DELICIOUS! (I want to try with chicken too)

Grilled Pizza Wraps

These were yummy! I made them on my quesadilla maker, sprayed with Pam(thus I didn't butter my tortillas)laying one tortilla down, then the filing and then another on top (rather than folding over). I cut them with a pizza cutter. i also added jalapenos and bellpepper, but you could add any pizza toppings that you like.

Garlic Green Beans

My green bean lover son said , "mom just fix em the regular way" ---they were not bad, but we didn't think they were anything special. Besides 3 T of olive oil plus 1 T of butter -- is a lot of fat to add to any vegetable

Mom's Best Pork Chops

I'm not sure what i did wrong, but my coating kept pulling away when I flipped while browning and when i turned while baking. After reading other comments, I added seasoning to the crackers as well as the eggs but still felt like the MEAT needed seasoning -will definitely season meat as well next time.

Pineapple Enchiladas

after putting enchilada sauce on bottom of pan, i added the rest to the mixture (accidentally added all cheese to mixture - i added onion, bellpepper & large can of chicken. layered with corn tortillas instead of filling flour - topped with picante and cheese. pretty good - like better 2nd day... billy says ok

Cranberry Sauce Chicken II

LOVED this chicken. As per other users, I mixed the sauce up early and stuck in the refrigerator. I was running short on time when it came time to acutally bake -so cut up chicken in bite sized pieces (I used 5 boneless skinless chicken breasts since I'm not crazy about dark meat)....then I tossed the chicken in the sauce until well covered. I poured the entire mixture in a 9 X 13 sprayed with Pam and baked uncovered for 45 minutes. It was delicious! We ate it over brown rice and served with green beans and a salad. I've already bought more Russian dressing and cranberry sauce (with whole berries!) to keep on hand for the next time I'm ready to throw this quick and easy recipe together.

Caramel Apple Pork Chops

YUMMY! In trying to make it lower in fat and sugar - I cut out the oil and just browned in a skillet with Pam. I used Brown sugar Splenda in place of the brown sugar (and did double the sauce & apple ingredients). I cooked the sauce and apples in the same skillet that I browned the pork chops and after they were tender - I added the pork chops back in, stirring to coat with sauce (and to warm). We LOVED it! I will certainly be making this again.

Cheesy Creamed Spinach Casserole

I DON'T CARE FOR COOKED SPINACH,SO I THOUGHT I'D TRY THIS TO SEE IF I WOULD LIKE IT. I THOUGHT IT WAS PRETTY GOOD,BUT STILL DIDN'T CHANGE MY ATTITUDE ABOUT SPINACH. ON THE OTHER HAND, MY HUBBY WHO LOVES SPINACH, THOUGHT IT WAS QUITE TASTY. MY PICKY TEENAGERS WOULDN'T TRY IT. I THINK IT WOULD BE SOMETHING DIFFERENT FOR A POTLUCK.

Bacon Chicken I

Very tasty and easy to prepare. My bacon was not brown after the 15 minutes uncovered, so I turned my oven to broil at 450 and cooked another 10 minutes until the bacon browned. The sauce was delicious served over mashed potatoes. Hubby and 2 picky teenagers cleaned their plates!

Paprika Pork Chops

this was so quick and easy... and YUMMY! for some reason i thought it called for whole can of sauerkraut (I used bavarian)...so i drained and mixed a whole can but used all other ingredients as called for --it was great...piled high on the pork chops.
