Lemon Chicken Soup II

Reviewed: Feb. 3, 2007
After making it according to the recipe, I then tried it with brown rice. It is delicious and more substantial. Vigorously boil the rice in the water about 30 minutes before adding the other ingredients. A great recipe for leftover chicken. I also use organic frozen chopped spinach rather than fresh. This goes to the e-coli issue plus making it even simpler to assemble.

Onion Chicken in Balsamic Sauce

Reviewed: Feb. 4, 2010
Just made this for the first time and we loved it. I used the suggestions of adding mustard and butter after reducing the sauce. I cut the onions in half and then thinly sliced rather than chopping them. Used chicken breasts and thighs. For those who think the amount of liquid should be cut in half, I wonder if their sauces reduced properly. This website has good articles on how to reduce sauces and caramelize onions. Love allrecipes.com!

Flank Steak Barbecue

Reviewed: Jun. 8, 2012
I love this recipe! Be sure to use fresh garlic and ginger and marinating it the night before is even better. I skip cooking the marinade sauce--tried it the first time and found it too oily. We grill squash and portabelo mushrooms with this and serve with brown rice. Also makes for delicious leftovers.

Light Avocado Egg Salad

Reviewed: Jun. 16, 2014
I used Dijon mustard and added capers and a little fresh lime juice. Loved it! If I were serving it to guests, I'd add some parsley, just for appearance enhancement.

Simple Turkey Chili

Reviewed: Jan. 12, 2010
This is one of my favorite winter comfort food recipes. I have modified it to use chunks of turkey breast, rather than ground; I saute the onions, remove them and then brown the turkey. I use only about 1/2 cup of water and add 1/4 cup of red wine and I cut the chili powder and tomatoes in half. I also cook it for about 2 hours, to really blend the flavors.
