Light Avocado Egg Salad
I used Dijon mustard and added capers and a little fresh lime juice. Loved it! If I were serving it to guests, I'd add some parsley, just for appearance enhancement.

Flank Steak Barbecue
I love this recipe! Be sure to use fresh garlic and ginger and marinating it the night before is even better. I skip cooking the marinade sauce--tried it the first time and found it too oily. We grill squash and portabelo mushrooms with this and serve with brown rice. Also makes for delicious leftovers.

Onion Chicken in Balsamic Sauce
Just made this for the first time and we loved it. I used the suggestions of adding mustard and butter after reducing the sauce. I cut the onions in half and then thinly sliced rather than chopping them. Used chicken breasts and thighs. For those who think the amount of liquid should be cut in half, I wonder if their sauces reduced properly. This website has good articles on how to reduce sauces and caramelize onions. Love!
