A Firefighter's Meatloaf

I have tried alot of meatloaf recipes and never found one that could type my Nana's!!! But this one is really good -I didn't change a thing and it will definitely be going into our "favorites" cookbook!

Hash Brown Sandwich

While looking for something easy and yummy to make for dinner, I came across this recipe - we love to eat breakfast at night!! My only problem was trying to flip the "sandwich" to brown the other side?!?! When writing this review, my husband suggested I give it the "empty plate" award!! He finished off ever last bite and then some!!!

Cheesy Sausage Nachos

Yum!! We love nachos, especially for a quick, easy snack supper! I made these without the picante - for the kids' sake - and added lettuce. We will be having this alot!

Pepperoni Pizza Pita

This is a great idea!! I needed a QUICK meal the last week of school and this worked great! The kids love the "personal" size and they can put whatever they want on it - I love not making dough!! I sprayed each pita on both sides with cooking spray and put them in the oven to crisp before topping...we used mini pepperoni, veggies and lots of cheese. This will definitely be a staple in our house!!

Roasted Root Vegetables With Apple Juice

YUM! I had no idea that I loved all of these root veggies!! Roasting is the way to go! I've made this several times and this last time, I took it to my husband's fire station during our Thanksgiving meal....here are the changes I made: added fresh brussel sprouts - after cutting the veggies, toss them in olive oil and sprinkle w/ kosher salt and freshly ground black pepper - roast until slightly tender - meanwhile reduce the butter, wine and juice mixture - pour over veggies and continue roasting until thoroughly done - occassionally stirring.....

Emerald Fruit Salad

What a great new way to get some fruit into a meal!! I did have to use some substitutions: I didn't have yogurt or orange juice, so I used sour cream and lime juice, no orange peel....turned out great!

Vegan Yogurt Sundae

This is similar to another recipe I have - we call it "breakfast sundae" and it is also non-vegan...I use fresh berries and sprinkle unmelted chocolate chips on top - my kids like our original version better and it doesn't include the extra sugar and butter!!! But, I think occassionally, I will like to have the melted chocolate drizzles on - it makes it seem like a real sundae!!

Drunken Chicken

OMGosh! This was so easy and soooooo good!! I covered the bird w/ foil and added some potatoes to bake on the grill also....total cook time was less than 2 hours. Sauteed mushrooms and onions in leftover beer dressing!

Breakfast Bundles

Who doesn't LOVE cookies for breakfast? My kids love grapenuts, but they always leave some in the bowl - so I don't let them have it very often! This recipe turned out to be a great way to get them to eat a good breakfast - it made about 2 dozen "regular" sized cookies and we ate them all at once!!!

Maple Glazed Chipotle Goat Cheese Lamb Burgers

This was an experiment for me!! I've never cooked lamb before, but recently found some pre-made patties in the quick sale meat section, so I decided to try them. Since they were already made into patties and wrapped with bacon, I can't give a full 5-star rating because I didn't follow this recipe exactly - I used the salt, pepper, rosemary and some minced garlic as a rub - then brushed them with maple syrup during cooking. I liked the flavor enough, that I will be keeping this recipe to make as directed - I think ground lamb as a burger with the other ingredients mixed in and served with roasted potatoes as a side will be an excellent meal.

This is a good recipe, but I did use less red pepper flakes for the kids' sake!! I really like Asian food and love to find new recipes that are easy and I can cook at home!

GREAT!!! My kids are not fish lovers, but they all raved over this - I'm sure it is the cheese!!! This is a definite keeper and next time I will bake it over asparagus, as other reviewers suggested!

Hungry Man's Hash Browns

We make a recipe similar to this all the time, especially when we want "breakfast for dinner"....usually I add chopped bell pepper in with the onion and when it is done, top it off with LOTS of shredded cheddar....sometimes I plate and add fried or scrambled eggs on too!!!

One-Dish Beef Stroganoff and Noodles

So quick and easy!! Tasted just as good as my "usual" recipe - but I liked cooking the noodles in the same pan then tossing it all together.....I will add some more seasonings next time, just needed a little more flavor!

Ranch Garlic Bread

Oh, my!! This is delicious. I only had some leftover slices of french bread - so I buttered one side, grilled it butter side up until melted and flipped it for some quick grill marks!! The kids raved, too!!

Broccoli with Rigatoni

I used this recipe based on the "6 Dinners under $100" menu.....perfect vegeterian meal w/ bread and a salad! It was an easy quick main dish to make on a weeknight - we love mac n cheese and alfredo and this fits easily into that category. We will be adding this to our menu regularly!!

Daria's Slow Cooker Beef Stroganoff

I used this recipe for a friend who's just had a baby - they loved it, but I must admit that I tweaked the recipe a bit!!! I had swiss steak on hand and it turned out sooooo tender in this dish. Also used fresh mushrooms and chives...stirred slightly cooked egg noodles in w/ only 8oz sour cream toward the end of the cooking time...and I didn't have fresh parsley to top it off...

Creamy Barbecue Chicken

Wow - I didn't read the reviews before I made this and I'm glad I didn't, because we loved it!!! My kids all went back for 2nds and my husband, who doesn't really like chicken, said this is a keeper!! The sauce was not as thick as I was expecting, so next time I will try to make it thicker....I served it with garlic toast that was great for mopping up the juices - next time I will add the Ceasar salad that another reviewer suggested!
