Hash Brown Sandwich

While looking for something easy and yummy to make for dinner, I came across this recipe - we love to eat breakfast at night!! My only problem was trying to flip the "sandwich" to brown the other side?!?! When writing this review, my husband suggested I give it the "empty plate" award!! He finished off ever last bite and then some!!!

Cheesy Sausage Nachos

Yum!! We love nachos, especially for a quick, easy snack supper! I made these without the picante - for the kids' sake - and added lettuce. We will be having this alot!

Breakfast Bundles

Who doesn't LOVE cookies for breakfast? My kids love grapenuts, but they always leave some in the bowl - so I don't let them have it very often! This recipe turned out to be a great way to get them to eat a good breakfast - it made about 2 dozen "regular" sized cookies and we ate them all at once!!!

Broccoli and Cheese Brunch Casserole

We love breakfast casseroles and this will be a wonderful new addition to our collection!! It's a great way to get some extra veggies into your day also. I used only a 1/2 cup of ricotta and put the tomatoes on before the extra cheese - then baked it uncovered for about 30 minutes. I will try adding onions and mushrooms next time and maybe some different meats or cheeses, too!!

Hamburger Salad Sandwiches

I was a little skeptical about this recipe, but decided to try it and it was great - quick and easy. I kept the meat mix warm and added cheese slices....served it on square bagels - just for something different! Had a side of seasoned fries to make a complete easy weeknight meal!!!

Enchiladas Suizas

Just say "heavenly"!!! These were fabulous enchiladas....I used flour tortillas (no frying) and poured a small can of evaporated milk instead of heavy cream over the top....then a can of rotel tomatoes (drained) instead of the green onions, olives and cherry tomatoes. I finished it off w/ extra cheese!!! All of my kids ate every bite and we can't wait to have them again - soon!!!

I was skeptical of this, but it really is good. And the kids liked it too! The only problem I had was the "mess" in preparing it - since it doesn't have any fat to hold it together!

Ranch Garlic Bread

Oh, my!! This is delicious. I only had some leftover slices of french bread - so I buttered one side, grilled it butter side up until melted and flipped it for some quick grill marks!! The kids raved, too!!

Grilled Garlic Potatoes

Fabulous potatoes! I'm always looking for new recipes for the grill and this will definitely be used alot! I forgot to read the reviews first (again!) so next time I will use premade foil bags and spray them - also will try other spices and mix w/ olive oil to toss w/ potatoes before pouring into the bag. We even added mushrooms and carrots -the cheese is a definte MUST!!

Oven Roasted Red Potatoes and Asparagus

I love roasted veggies and this was a great recipe for asparagus! I did take some of the previous reviewers' advice about cooking the potatoes longer and using less spices. I also added sliced fresh mushrooms and diced red onions.

A Firefighter's Meatloaf

I have tried alot of meatloaf recipes and never found one that could type my Nana's!!! But this one is really good -I didn't change a thing and it will definitely be going into our "favorites" cookbook!

Emerald Fruit Salad

What a great new way to get some fruit into a meal!! I did have to use some substitutions: I didn't have yogurt or orange juice, so I used sour cream and lime juice, no orange peel....turned out great!

Drunken Chicken

OMGosh! This was so easy and soooooo good!! I covered the bird w/ foil and added some potatoes to bake on the grill also....total cook time was less than 2 hours. Sauteed mushrooms and onions in leftover beer dressing!

Tater Tot Taco Salad

Since I have been working in the evening, it has been up to Dad to feed the kids - so I've been on the lookout for easy recipes that they all will love. This one fits the bill!! The kids like all of the ingredients and the adults were able to add extras like jalapenos, salsa and olives. This recipe will definitely go into Dad's cookbook for future meals!

Caribbean Chicken Salad

I have made this several times for ladies' dinners and I always get RAVE reviews!! It's a great way to use up those small chip pieces leftover in the bag and I also add avocado slices. It's quick and easy to fix and tastes FABULOUS!!

Slow Cooker Spaghetti Chicken

I needed a quick meal (with ingredients I have on hand) for the kids and sitter tonight - put this together in less than 10 minutes....I did make some changes: put uncooked spaghetti on the bottom of crockpot, added chopped chicken and topped w/ slices of American cheese....subbed cottage cheese for cream of chicken, mixed w/ cream of mushroom and rotel - poured over other ingredients! It smells great and I think they will love it with a veggie and some cheese muffins.

Hungry Man's Hash Browns

We make a recipe similar to this all the time, especially when we want "breakfast for dinner"....usually I add chopped bell pepper in with the onion and when it is done, top it off with LOTS of shredded cheddar....sometimes I plate and add fried or scrambled eggs on too!!!

Cheesy Baked Salmon

GREAT!!! My kids are not fish lovers, but they all raved over this - I'm sure it is the cheese!!! This is a definite keeper and next time I will bake it over asparagus, as other reviewers suggested!
