Chicken Enchiladas I

The family raved over these but I'll be cutting back on the chili powder next time, and adding some cayenne for a little more zip. As it was the seasoning was kind of bland. I omitted the water altogether, and the consistency was great.

Chocolate Crinkles II

This is a tried and true recipe I've been using for quite a while. To make rolling the balls easier, I just scoop up the right amount of dough and drop it in the powdered sugar, and after it's well coated, I roll it into a ball.

Nice flavor, but really dry. I will be experimenting and see if I can come up with something a little more moist. As it is, it's great if you add a generous bit of butter!

Fried Okra

This worked well for me, and I'm usually unsuccessful at deep frying! I let the egg soak on the (frozen, not fresh) okra for a full 10 minutes and then stirred in the cornstarch (halved with flour)and let it sit while the oil heated. I didn't stir it, just flipped them with a spatula a couple times, and they turned out great. Definitely will be using this recipe again!

Herb Roasted Pork

I've made this quite a few times for company, and it never fails to get compliments. I always double the glaze, which goes great with rice. The past few times I've made it, I skipped putting on the glaze while the roast was cooking. After slicing the pork, I simply pour it all over the arranged platter. That way there's sure to be juicy flavor on every bite!

Homesteader Cornbread

I've made this recipe many times and it always comes out very heavy and moist. I prefer a cornbread more light and crumbly.
