Slow Cooker Texas Pulled Pork

This is NOT the basic pour a bottle of prepared barbeque sauce over your shredded pork. I loved that the recipe makes its own sauce as the pork cooks. You can add more bbq sauce on top of your sandwich if needed. But the sauce itself is delish! Great job!

Stuffed Zucchini

Recipe didn't make much sense, so I followed my own common sense and suggestions from others - browned meats first with onion and garlic. Added parmesan cheese to stuffing. Topped with a lot of jarred tomato sauce and mozzarella cheese. Had to cook for 10 min covered to "steam" zucchini to be sure they were done. This was very good.

Easy Enchilada Casserole

Pretty good - I followed tips: baked uncovered for whole time, added layer of tortilla chips in middle. Added a can of each black beans and corn. Also switched 1 cup of salsa for enchilada sauce. It would have been 5 stars if it was a bit more "saucy". So next time, I'll add more salsa and enchilada sauce.

Tuna Noodle Casserole from Scratch

Delish! Double the recipe to fill a deep dish casserole pan. Be patient when making the sauce with the milk/flour. Just when you think it will never thicken, it does. You can change it up to make different meals – use mini shell pasta (holds the sauce better), add chicken instead of tuna, add all sorts of veggies. I added cubed Velveeta and it made it soooo gooey. I also added shredded cheese in sauce and didn't use the breadcrumbs, just more cheese.

very good - super easy. NOT spicy at all. I made two baches, one with spice & one without, worried about the kiddos not liking the spice, but the batch with the spice was very mild. If you like a stronger flavor - double the spices!

Jalapeno Popper Cups

Excellent! I didn't have any bacon, but they were tastey anyway! Brought them to a pot luck and didn't have ANY to take home. I highly suggest doubling the recipe. I had left over filling that I just popped in the oven and served with chips.

Roasted Rack of Lamb

Wonderful and easy! I made this as a special birthday treat for my husband. I was a little intimidated to try "rack of lamb" but was delighted with the results. I would cut the salt used in the breading in half. I served it with roasted potatoes. My husband said, "This is the best meal you've ever made me!"

Chicken Enchiladas I

Great recipe! Took other's advice and did not include water, the filling was perfect. I used two cans of tomato sauce for filling and one was a Picante which gave it a nice kick. I also used canned enchilada sauce, two cans. Perfect! Word of warning, this is not the typical "cheesy" enchilada, the filling is more creamy, tomatoey. Good, but not what I was expecting.

Chicken Pot Pie IX

Amazing as is, but I made a few tweaks for my personal taste - I double it; use a whole store bought rotisserie chicken - remove skin and chop; sauté sliced mushrooms in butter - set aside; sauté onions in butter till translucent - set aside; large dice - red potatoes, sliced carrots and celery boiled until potatoes are tender, but still firm; add chicken to boiling veg mix to heat through - drain and set aside. Make sauce in large stock pot - once thick, add in mushrooms, onions, a can of corn (drained), veggie/chicken mix - fills two large/deep dish pie dishes. Cook on a cookie sheet to avoid drips. You can substitute any veg you like.

Very Very good - lots of rave reviews on Christmas morning. Though, there isn't much of an egg taste. I think next time I will use half as much cheese and had more milk and egg mixture.

Sugar-Coated Pecans

These were soooo good. My only suggestion would be to use more than 1 tablespoon egg whites and to really wisk them. I made two batches and the second came out much better than the first. Everyone loved them!

Fast Chicken Soup Base

This was my first attempt making chicken soup. It was good, but a little greasy for my taste. I think that was because it was a rotisserie chicken. It did take a bit longer than I expected. I added all the things I liked, corn, green beans and noodles.
