Basic Ham and Bean Soup

Reviewed: Jan. 22, 2009
Excellent and very easy! Great way to use leftover ham. The chaanges I made are as follows: boiled beans for 5 minutes in water nd then soaked for 60 min. I drained the beans and added back to pot with 6 1/2 cups of chicken broth and an additional 1 cup of water. I used 1/2 bag of baby carrots, 4 stalks of celery, 1 large russet potato and 1 whole onion. I then let it simmer away on the stove top for almost 2 hours. It was perfect!

Spinach Quiche

Reviewed: Oct. 3, 2008
Great Quiche base recipe. I've made this several times recently and have received rave reviews every single time. I have made quite a few changes - but I think this is a good base recipe. You can pretty much add any type of veggie and cheese you like. I've made it a tad healthier by using a combo of egg beaters, turkey sausage, onion, green pepper, mushrooms and reduced fat cheddar cheese and the results are outstanding. The cooktime remains the same. Great recipe!

Restaurant-Style Hashbrown Casserole

Reviewed: Oct. 3, 2008
Excellent and easy -- perfect side for breakfast. In an attempt to make it healthier, I omitted the butter and added 1/2 cup fat free sour cream instead. I also used 98% reduced fat cream of chicken soup. It still tasted very rich and I will continue to use these fat savers when I make it again! Great recipe!

Italian Sausage Soup

Reviewed: Oct. 3, 2008
Excellent soup and super easy to make. Will definitely add this to my list of favorites! Changes I made were minimal -used 32 oz beef broth and added 2 cups cooked pasta. Next time, I will add even more broth since the pasta seems to soak it up overnight.

Bratwurst, Potato and Cabbage Soup

Reviewed: Sep. 16, 2008
Excellent and will definitely make again. I used Turkey Bratwurst and thought it worked well. I also added red pepper flakes, garlic powder, salt, soy sauce and replaced 1 cp of water with 1 cup of chicken broth.
