Breakfast Casserole

Reviewed: Mar. 8, 2009
This was very good, and very easy to put together. After putting 2 slices (cubed) of bread in the dish I decided it would need 3. I also added 2 additional eggs. We enjoyed this a lot!

Kielbasa Alfredo

Reviewed: Mar. 5, 2009
My husband kept saying 'mmmmm' as he was eating. That's not the usual. But, he likes kielbasa. This was easy and enjoyable. I used the Easy Alfredo Sauce I from this site, too. A quick, easy meal. Thanks for the post!

Chicken Adobo II

Reviewed: Feb. 27, 2009
This was very enjoyable. Not having the apple cider vinegar I subbed with rice vinegar. I think that was a good choice. It wasn't acidic as others stated. Quite good! I marinated it for about an hour before putting the chicken in the skillet. It took more like 45 minutes than 20 minutes to cook but it sure made the house smell good! Will use again. Thanks for the post!

Simple Beef Stroganoff

Reviewed: Feb. 24, 2009
A very good and easy recipe to put together. We had a super busy day and I was in no mood to 'cook'. Found this recipe the day before and glad I did. The only change I made was adding mushrooms that needed to be used up. The hubby went for seconds. Will surely make again.

Virgina's Tuna Salad

Reviewed: Feb. 24, 2009
Very good. I've been making tuna fish similar to this for years. I really like the egg in it. I added a bit more mayo in it than what the recipe calls for.

Dump Cake V

Reviewed: Feb. 19, 2009
I've been making dump cakes for years and enjoy them all! This is pretty much how I make them but I don't add nuts because of the hubby not liking them and I'm not a big fan of coconut, so I didn't add that. As we were eating it I had a different taste wondering what it was... Looking at the cake mix box in the trash I had mistakenly picked up a lemon cake instead of a yellow cake. It was very good! I like to melt the butter down, mix it with the cake mix and then spread it over the top of the cake.

Seafood Pasta Salad

Reviewed: Feb. 11, 2009
We thoroughly enjoyed this salad. Basically made as is except I used 12 ounces of pasta and added a little more mayo. We enjoyed it as a side one night and as a light meal the next.

Upside Down Pizza

Reviewed: Feb. 11, 2009
Made this as is except I used 1 1/4 lbs ground beef and added mushrooms. We did enjoy it very much. Was easy to put together. Leftovers reheated really nice in the nuker. My only problem is that it didn't even half fill a 13x9. This should be put into an 11x7 especially if you're only using the 1 pound of meat.

Easy Pasta Casserole

Reviewed: Jan. 5, 2009
We thought it was a very good casserole. Better, it was easy! Didn't have stewed tomatoes so I subbed diced tomatoes. I liked Anna's idea of adding black olives so I sliced about 3/4 of a can of them. I used a 12 oz package of 'musical' pasta as I wanted to use it up. Any pasta would work great with this dish. Thanks for the post!

Busy Day Chicken

Reviewed: Dec. 8, 2008
Very easy and very good. I used a good 3 lbs. of chicken thighs versus the whole chicken. After reading a lot of posts I thought I should add about 1 cup of chicken broth. I'm not quite sure it was needed, though. Chicken was flavorful and very tender, moist, fall off the bone. Can't wait for a chicken sandwich! Thanks for the post!

Slow Cooker Sweet Potato Casserole

Reviewed: Nov. 29, 2008
What a lifesaver! It freed up my oven for other items. And, this was so easy to put together with canned potatoes! Was very good! The only problem I had was I ran out of brown sugar!! I had to use white in the topping. Wasn't bad but I think it would've presented better with the brown. My husband won't do nuts so I didn't add those. Very good dish!

Pea 'n' Cheese Salad

Reviewed: Nov. 29, 2008
A nice pea salad. If you cook your eggs ahead of time it's not so time consuming. We really enjoyed the radishes.

Old Fashioned Giblet Stuffing

Reviewed: Nov. 29, 2008
Finally I made some giblet stuffing for my husband. He was thrilled and he also enjoyed it, as did I, very much. Next time I think I might add a bit more celery and onions, though. I also used a bit more than 1 cup of broth. I baked it separately in a 350 degree oven for about 45 minutes, covered. Great dish!

Slow Cooker Adobo Chicken

A very good and easy chicken. If you're not fond of soy sauce or garlic you may not like this very much. Chicken was moist and tender.

Cherry Cheesecake

Reviewed: Nov. 15, 2008
An ever so easy and tasty little cheesecake! I saved this recipe out of a magazine years ago and it's been a favorite since. It was called a 'Cheery Cherry Cheese Pie'. You must let the cream cheese completely soften before mixing with the 'milk'. I'm not understanding why other reviews have said the cheese part hasn't set. I can only assume it's because they're not sticking with the recipe. After making this recipe at least 3-4 times a year for the past 20+ years I have never had a problem. It's always set after about 4 hours to add the cherries. Another thought: 12 servings is a little extreme unless you only want a taste.

Wake-Up Casserole

Reviewed: Nov. 5, 2008
Very good breakfast casserole. As other reviewers suggested I pre-baked the hash browns for 10 minutes. I didn't have any problem with them being soggy. And, instead of 7 eggs I used 9.
