Curried Mustard Greens with Kidney Beans

This dish makes me so happy to be vegan (with a few changes, that is)! I only gave it 4 stars instead of 5 because I tweaked the original recipe a bit. I used safflower oil instead of the ghee and soy milk instead of the half & half. I added an extra tsp of curry and about 1/2 cup of raisins also. The raisins are a must (thank you to the previous reviewer who suggested it!) I served it over wild rice. This recipe is a keeper!

Skillet Meatloaf

This was simple and tasty. I did make some changes, for what I had on hand. I used ground turkey instead of beef and oatmeal instead of bread crumbs. Instead of canned tomato soup, I used a partial box of organic tomato soup (not condensed). I used a good tablespoon of spicy mustard. I also made 4 loaves instead of 2, and used sliced muenster instad of shredded mozz. Thumbs up from the family, and DH doesn't like turkey burger - was a good disguise. Will make again!

Honey Wheat Sandwich Rolls

Awesome rolls! Light, moist, with just a just a touch of sweetness. This will become my go-to recipe. I too increased the wheat flour and reduced the white, increased the yeast to 1-1/2 tsp per suggestion, and I used brown rice syrup instead of honey which I didn't have on hand. I can't recommend these enough. Made turkey loin/honey-mustard cole slaw sandwiches with them. Unfortunately the dog enjoyed the other half of the rolls while hubby was in the shower. At least now I won't be tempted to eat them all myself today.

Fennel Pork Chops

By rights I probably shouldn't rate this recipe because I adjusted it to what I had on hand, etc. I sprayed olive oil in the skillet and sprinkled both sides of the chops with salt and garlic powder, put the fennel on one side like instructed. Then I used 1 cup of chicken broth instead of the wine, covered for maybe 5-10 minutes and then added a corn starch/water mixture to thicken the sauce into a gravy. It was really good.

Mocha Tiramisu by EAGLE BRAND®

This was pretty yummy. I dusted the top with confectioner's sugar and added fresh raspberries on top too for a pretty presentation. I only gave it 4 stars because I'm just not a fan of soggy cake. The fillings were awesome though...I can taste the espresso sauce on top of ice cream. The whipped cream filling could be used in a chocolate cookie crust pie with the espresso sauce as topping. Really really yummy. I would suggest letting it sit a day too so everything is nice and cold and the flavors have time to meld. We ate it a couple hours after I made it and it was good, but for breakfast the next day it was much better. :)

Cherry Pie IV

The angels have sung. I'm a cherry fanatic, and this is awesome. I used my own crust and frozen sweet cherries, and it came out just divine. A definite keeper!
