Mulligatawny Soup I

Delicious, thank you. I made the following changes based on preference and ingredient availability: no celery, carrot, or thyme; subbed brown rice pilaf for white rice; blended the apple, onion, and broth; cooked the chicken in a crock pot; and added corn and the flour at the end. I loved this and will definitely make this again!

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

I didn't find these to be very spicy. I thought I followed the recipe closely*, and even let them marinade overnight. However, the flavor I did get was still very tasty, but a little too salty. Thank you for this recipe, I will definitely try it again. *I used two bouillon cubes, not granules, and dissolved them in 1/2 cup of water, so maybe this diluted it too much? I also broiled them since I don't have a grill.

Sweet Potato Pie I

Delicious. I followed some other suggestions and added ginger, flour to thicken, and lemon juice to bring out the flavor. I also added a couple drops of red food dye to make it a bit more bright orange. When it was done, still warm, the texture was a little mooshy, but the next day, after refrigeration, it was firmer but not hard. Everyone raved over it! No complaints here.

Beth's Spicy Oatmeal Raisin Cookies

I didn't have cloves, so I couldn't use them, but I added nutmeg. I also used the 1 cup butter, as others suggested. I don't know if I mixed the batter wrong or maybe mismeasured - though I always double check - but these came out less than stellar. It took 15+ minutes for my first batch to cook, the dough was very mushy. I also don't think the flavor is as good as described. But like I said, perhaps I mixed something incorrectly. I would try this again.

Chai Buttercream Frosting

Great frosting recipe when it comes to the consistency. I've tried two other recipes on here that were crapola, but this once has a great, firm texture. I give it 4/5 stars, however, because I personally didn't find the taste of the chai to be strong enough over the sugar (I combated this by adding extra cinnamon, nutmeg, and clove). I'll definitely reference this one again.

Basil Chicken over Angel Hair

Delicious. I only added green and red peppers to this. I would have preferred it with more garlic, but I suppose that's not the point of the dish. =) I'll definitely serve this again.

Sturdy Whipped Cream Frosting

This recipe gets ONE star, only because the flavor was decent. It was NO WHERE near sturdy - more like a pudding than frosting. Such a let-down.

Mango Salsa Salmon

It's true that the salmon did go very well with the mango, but I wished that the mango flavor was a bit sweeter - it could be that mine wasn't 100% ripe. Next time, I may add a tablespoon or something of sugar over the mango, but that's just personal taste. Overall, very tasty.

this recipe was good, but i tweaked it a little bit. i made the marinade batch with a little more than it called for and added ginger, and after the fish cook, sprinkled just a TOUCH more on top, and it was perfect. i've used it on shrimp, too.
