Carrot and Ginger Soup
I love this soup! One time I had extra guests coming, so I added a baked sweet potato that I had on hand and 2 cans of coconut milk instead of the heavy cream--and wow, was that fantastic! Now, I regularly add the coconut milk, and if I have a sweet potato on hand I add that as well. I have even added some cilantro if I feel like going Thai!

Chicken Soup II
This was an easy, hearty one-dish soup that tasted superb! (Easy clean up too!) I used a whole bag of spinach, so it was really satisfying. I don't like meat, so I used tri-colored cheese tortellini, which I thought was enough pasta, so I skipped the noodles. Try sprinkling a little parmesan cheese on top before serving--it's delicious!

Amazing Pecan Coffee Cake
I love this recipe! I like the bundt version (with a light dusting of powdered sugar on top). I tried making extra topping as some suggested, but it was too much. The recipe amount is perfect I think. This is a rich, buttery cake, and doesn't need to be overpowered with tons of topping. The batter is thick, so you can pour half of it in the pan, make a well for the topping and then cover the topping with the rest of the batter so it doesn't touch the pan and stick.
