Strawberry Muffins

Loved it. But I did change it. Swapped the oil for melted butter. Added 1/2 tsp sugar & 1/2 tsp vanilla to the chopped fresh strawberries and let them rest while I got the rest together. Also added 1/2 tsp cinnamon, 1 tsp of cardamom, 3/4 c mini chic chips & 3/4 c unsweetened flaked coconut. Batter was thick and sticky. A knockout. Made 12 regular size muffins. Domed nicely.

Lazy Man's Pierogi

super great. I subbed the soup for a from scratch version found here http://centercutcook.com/cream-soup-substitute/ . also i wasn't sure if it should be covered while baking? I left it uncovered. Is that right?

Biscotti Toscani

So great! One tip: I add Ghiradelli cocoa powder to half the batch and then, instead of melting chocolate in the microwave, I turn off the oven when the cookies are done baking and place chips on top of cookies and put them back in the oven for a few minutes. They melt nicely and then I run a knife across to smooth the chocolate. It is so much less messy and you won't risk burning the chocolate.

Cream Cheese Tart Shells

These were just alright. I had to use pie weights when I baked the shells because they really puffed up on me. I will look for another recipe next time, probably one without cream cheese which is a bit lost in this crust.

Butter Cake

really good. worked well as cupcakes decorated with 'cream cheese frosting II' and 3-d cakes decorated with 'special buttercream frosting'. a million times better than box chemical cake.

Creamy Italian Dressing I

really, really good. i sent the onion through the grating blade on my food processor and then switched blades before adding the rest of the ingredients. it really minced the onion, almost liquified some of it. i used it in a pasta salad with olives, tomatoes, grated carrots, and cheddar cheese. the boyfriend loved it too!

Best Toffee Ever - Super Easy

tastes good, but i made the mistake of trusting candy thermometer (removed at 300) and not waiting until the mixture turned amber (also stirred the entire time)and it is light and not as brittle as it should be-it is also hot and humid today. still broke up well though. i used dark (70% cacao) chocolate and unsalted cashews on the top. i will try it again, stirring less, and using the candy thermometer as a guide not a governor.

Banana Muffins with a Crunch

The best yet and i make muffins every sunday! I 1/2ed the recipe and got 16 med. muffins. 25 min. produced perfectly browned muffins. Changes: used 1/2 brown sugar 1/2 white, for the crunch-pulsed 1 nature valley pecan crunch granola bar, 1/3 c. quick oats, 1/4 c. walnuts & 1/2 c. trader joe's organic unsweet coconut. followed last reviewers sugg. to combine dry, then butter, then wet, then crunch ingredients. these are too good, i usually smear butter on muffins when i eat them but these do not need any! i am packing some up for a neighbor before i eat them all!

Cream Puffs

really fancy looking but easy to make. I made ~20 med-large puffs and filled them with pastry cream then drizzled with melted chocolate and sprinkled with pow. sugar. I didn't have any trouble with cooking eggs (use room temperature eggs!), be prepared and move quick! I used my kitchen aid mixer.

Peanut Butter Cookies IX

Off the chain! Best pb cookie to date, buttery crisp. I used all white all purpose flour since i didn't have wheat, and reduced the salt to 1/4 tsp and used trader joe's creamy unsalted pb, quaker quick oats and ghiradelli semi-sweet chips. They may be even better the next day than fresh out of the oven. Mmm-yeah.
