Roasted Chickpeas

This was so easy to make and really delicious as a side dish. I make this at least once a week as a side to something. I usually add a tablespoon of minced garlic.

Very delicious! I mushed everything up when it was done. Also, I used an "Indian Eggplant" which was this long green eggplant (I found it at the market labeled as such). This was very good and my husband cleaned the pan after supper. This tasted very authentic.

Aunt Mary's Eggplant Balls

These were really good and worth the time to make them! The recipe made too many for my husband and I to eat in one night, so I froze the remainder. I heated them for 15 minutes in a 350 oven from frozen and they were great as a lunch!

Indian Rice (Pulao)

I laughed at the comment from the woman whose husband ate from the pot after dinner, but low and behold, I caught my husband doing the same thing later that night!!!
