About this Cook
I moved to DC last year from California. I became a vegetarian when I was 14, and learned if I wanted to eat food I like then I better cook it myself! Thankfully, it turns out I like cooking a lot. I usually get food cravings and then have to eat that food for a week straight, which some of my relatives are this way too so I think it must be genetic. I think some of the best meals I have made are impromtu with only the ingredients I have on hand.
My favorite things to cook
Vegetarian! But I also like shrimp very much, and fish if it is really fresh. I like my veggies slightly crunchier than al dente, I cant stand a mushy veggie, especially broccoli! My family is from Alabama, so there are a lot of Southern dishes that I enjoy (that I make low fat of course).
My cooking triumphs
Souffle & quiche are two things I have never gone wrong with.

Roasted Chickpeas
This was so easy to make and really delicious as a side dish. I make this at least once a week as a side to something. I usually add a tablespoon of minced garlic.

Indian Eggplant - Bhurtha
Very delicious! I mushed everything up when it was done. Also, I used an "Indian Eggplant" which was this long green eggplant (I found it at the market labeled as such). This was very good and my husband cleaned the pan after supper. This tasted very authentic.

Aunt Mary's Eggplant Balls
These were really good and worth the time to make them! The recipe made too many for my husband and I to eat in one night, so I froze the remainder. I heated them for 15 minutes in a 350 oven from frozen and they were great as a lunch!
