Mexican Bean Salad

Wow! Great! At first when I tasted the dressing I didn't think it was going to be anything special, but mixed with the vegetables it is great! I used an orange pepper (b/c we don't "do" green) and it made it SO colorful. Also, I didn't have a lime, and I'm sure that would make it even better.

Orange-Cinnamon Chicken

I did not put this in the oven...simply browned the chicken, took it out of the pan, made the sauce and then returned the chicken to the pan w/ the sauce to continue cooking. I used a home-grown orange, so it was a little tart. Thus, I added a little Splenda. I would double the sauce next time to have enough to serve over rice.

Banana Bran Muffins

Like other reviewers I used applesauce in place of oil. As well, I used Splenda regular and brown instead of "real" sugar, and omitted nuts to cut calories. This is a very pliable--as in apparently you can't do much to ruin it--recipe! The only mistake I made was to use paper liners...and we lost half of each muffin stuck to paper. My bad!

Peach Cream Pie I

This was an excellent recipe. I used a frozen pie shell and reduced the sugar to 3/4 cup which was plenty. The variations in reviews probably result from differences in amount of juice in the peaches. I tried to drain mine off a little after I peeled them. The pie was perfectly brown after one hour at 300, which really suprised me!

Barbecue Butter Beans

I have been using this recipe for several years and my husband loves it! Be forewarned, it IS sweet! Also, I agree that it is easy to overbake but delicious when done right.

Cut-Out Cookies

Followed advice of others and creamed sugar and shortening first, added dry later. Used exact amounts of flour. Rolled like a dream and tasted like the bakery cookies we get at Publix. Glaze was good, too, and it dried well.

Blueberry Pie

Kielbasa with Brussels Sprouts in Mustard Cream Sauce

I rated 5 stars but admit I did not exactly "follow directions". I just sauteed a chopped onion and about a Tbsp of refrigerated garlic (no time for this roasting garlic stuff....). Then I added diced kielbasa and sauteed until crispy (I used turkey kielbasa). Then I added the cream (fat free half and half, lol) mixed with dijon mustard and brought to a simmer, scraping the pan crispies off. I had steamed the brussels sprouts, so then I added them. At that point I thought we needed something to serve it over so I boiled a half box of fettucini...which ultimately we ended up mixing into the sauce and serving the whole thing in bowls. Added some more salt and pepper and viola! Excellent. Same ingredients...different execution! oh, p.s. I did not use the beans!

Almond Thins

I stumbled upon this recipe after a cookie search using almonds. I am at my mountain cabin and intended to get started on some holiday baking, but I didn't realize that I didn't have one of the ingredients I needed for the almond cookies I was going to make. I read all the reviews here and decided "really how bad could this be?". Well I found out that the original recipe as published has a huge "hassle" factor. Yes it was hard to roll..and I took others' advice and used parchment. Be sure to get it think enough in the middle! I rebaked mine (the center part) twice. Used a pizza cutter to cut it. For the second half I just rolled in balls and rolled in sugar, flattened with a glass over a little hunk of parchment. They turned out brown and crispy on the edges, but not very festive looking. I think a little almond flavoring might be helpful also. It wasn't worth the effort!

Makeover Fruit Pizza

OK, maybe you all think I'm crazy, but this was really good. I was skeptical when I formed that crumby mixture on the pizza pan...but it was really good. The only change I made was to substitute orange juice for pineapple (1/4 c. concentrate w/ 1 cup water) and skipped the lemon.

Boardwalk Quality Maple Walnut Fudge

This just didn't have the maple flavor I was anticipating. I used Mapleine brand maple flavoring which is the extract I use to make my pancake syrup. Even added more. I was a little disappointed. It was very simple and creamy; I can see where I would use this with other flavors of chips and get a good outcome.

Orange Cracker Apricot Chicken

Spinach Lentil Soup

I just dumped all the ingredients in the crock pot and let it cook all day and it was delicious. I used opposite stock/water measurements (made broth from chicken base mix) and I added a spoonful of garlic from the jar. Watch the red pepper flakes, it was spicy!

Grandma's Sugar Cookies

The flavor of these cookies is excellent but I was disappointed with the fact that they spread out so much on the pan. Perhaps the dough for my first panful was too cold; they all ran into one another. Then I tried baking them on parchment paper...a big improvement but my hearts still did not keep their shape very well.

Slow-Cooker Corned Beef and Cabbage

One of the best I've made. I usually cook on the stove but had things to do. I do use half apple juice and half water to cover and started on high for four hours, then switched to low. Added some extra pickling spices.

Sarah's Applesauce

I have made applesauce this way all my life, its a no-brainer! Probably would use a little less water, just enough to keep it from sticking to the pan. Now we use Splenda instead of sugar for a zero point Weight Watcher fruit.
