Turkey and Quinoa Meatloaf

Reviewed: Jun. 20, 2010
Outstanding!! My daughter made this for Father's Day upon our return from a trip out of town....it was plenty spicy without hot sauce; she substituted ketchup.

Pickled Mushrooms

Reviewed: Jun. 20, 2010
A most excellent way to prepare an abundance of mushrooms. I froze some in hopes that they will thaw and not be mushy. I did use almost twice as many mushrooms b/c there was so much brine.

Apple Raisin French Toast Strata

Reviewed: Dec. 25, 2009
My daughter said "muy bien"! Used Pepp. Farm whole wheat raisin bread and threw in a handful of extra raisins, and a few more apples (the one apple I used was HUGE). Only used six eggs and think I would go with the full amt next time...did not get done in time allotted even at 350. Also, I only used 1/2 pkg. cream chesse which was plenty. Would probably make again.

Cheddar Cauliflower Quiche

Reviewed: Nov. 26, 2009
This was a different twist on a quiche. We used refrigerated pie crust to save time. Toast the nuts in the microwave and don't overcook the cauliflower; it will cook more in the oven.

Cajun Crab Soup

Reviewed: Nov. 13, 2009
Overall excellent; I think I will thicken it a little more next time. Good with a splash of sherry on the top. Just enough heat.

Peppered Bacon and Tomato Linguine

Reviewed: Nov. 13, 2009
Very simple but excellent. Had a hard time finding peppered bacon but finally got some at Wal-Mart. I did double the tomatoes and used Italian style. Also used regular onions, about 1/2 cup chopped. Added 3/4 c. half and half.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Nov. 4, 2009
Oops I just realized we used a whole pkg of ranch drsg mix...but it was great! Very spicy (I used Ken's wing sauce) but we slathered our buns with bleu cheese dressing which helped cancel out some of the heat. A great Saturday supper!

Sweet, Sticky and Spicy Chicken

Reviewed: Oct. 6, 2009
This was good but not great. I would add some cornstarch to the liquid so that it would be thicker and stay on the chicken. Also, I would not season the chicken with salt and pepper because the sauce has enough salt (and I am a salt lover!) Will probably try again with these changes; waiting for the sauce to thicken on its own causes the meat to dry out.

Szechwan Shrimp

Reviewed: Sep. 23, 2009
Not quite spicy enough but good. I added a little sweet thai sauce to tweak it up. Was happy to find a recipe calling for cooked shrimp.

Kind of tasteless...even added salt didn't help much.

Buffalo Chicken Dip

Reviewed: Sep. 17, 2009
I have also been making this for years...the original recipe was only half as much and I had to double it (to proportions here) for our annual Christmas party--it was devoured! Please be sure to use Frank's sauce...it just worked better than another brand I tried b/c I think it was a little thicker.

Makeover Fruit Pizza

Reviewed: Aug. 16, 2009
OK, maybe you all think I'm crazy, but this was really good. I was skeptical when I formed that crumby mixture on the pizza pan...but it was really good. The only change I made was to substitute orange juice for pineapple (1/4 c. concentrate w/ 1 cup water) and skipped the lemon.

Awesome Slow Cooker Pot Roast

Reviewed: Aug. 14, 2009
I make this all the time, but with not quite as big a roast, so I only use one can of mushroom soup. Instead of water I use about 1/2 soup can of red wine--(whatever is sitting open on the shelf--or a bottle I have deemed undrinkable for pleasure). You really don't need more liquid than this in the slow cooker and it makes great gravy. Sometimes I throw in a handful of baby carrots.
