Amish White Bread

This made two beautiful loaves. Very dense, though. Makes great toast but not light enough for a sandwich.

Broccoli and Carrots with Oranges

This was a nice change. I did not add the cashews due to high calories in them but I'm sure that would make it extra yummy. I did melt down the marmalade to make it easier to coat the vegetables. Baked longer as we like our carrots softer.

Slow-Cooker Corned Beef and Cabbage

One of the best I've made. I usually cook on the stove but had things to do. I do use half apple juice and half water to cover and started on high for four hours, then switched to low. Added some extra pickling spices.

Creamy Corn and Zucchini

Gosh I hate to review a recipe I only made halfway but just getting the corn, onions & zucchini sautéed smelled SO good we decided to cut the calories and quit right there. Seasoned with a little Italian seasoning. Will probAly do the cheesey version for guests someday!

Ragu No-Frying Eggplant Parmesan

Great way to make eggplant parm. I cut recipe in half for two of us and only needed one egg. Used homemade sauce I keep in the freezer. Also Italian shredded cheese vs plain mozzarella added more flavor. Serve with a side of Italian sausage. Yum!

Iced Pumpkin Cookies

These cookies were excellent and disappeared at a party I took them to. I had to laugh because my husband claims to not like pumpkin in any form except pie but when he tried these he claimed they were exactly like the spice cookies his grandmother made. We won't tell him they are pumpkin!

Southern Fried Apples

I cut down butter to 1/3 c and used 1/3 c brown sugar. There was enough liquid left over to cook two more apples after dinner. Yummy!

Italian Eggplant Salad

I couldn't see wasting the energy to roast the eggplant whole. I peeled and diced it and roasted for 30 min. While I'm sure it would be delicious as is as a salad, I mashed the roasted cubes and added in enough of the dressing to make a spread. Also would be very sweet--in error we used 2 tbsp vinegar and even that is a bit on the sweet side.

Rhubarb Strawberry Crunch

Half of the topping recipe was plenty as this fit in a 10x7 pan. Had made previously with full amount and felt like we were eating more topping than fruit. As well, since my daughter is GF the GF flour can get too gritty in large amounts.

Onion Jam

Wow! Delicious. I think I would prefer thinly sliced (&perhaps halved) onions next time. My sugar seized even before I got the onions into the pan but thankfully I read reviews stating that this would melt back out. Mine is very thick--perhaps I overlooked but flavor is great. Next time I'm going to try balsamic vinegar.

Baked Rice Pudding

I'm sure if made as is this would be even better than five stars. Due to Weight Watchers status I used Egg Beaters and Splenda. It still is delicious and really reminds me of my late mothers version.

Shrimp Scampi Bake

Cut recipe in half but used full amount of parsley, garlic & lemon. Added some fresh ground pepper and 1/4 c Chardonnay. Sautéed on stove instead of baking. Yummy over pasta.

Not too sweet. I did cut back a bit on the butter--I used 3/4 c in a doubled recipe. I knew making as is it would be wiped out in the blink of an eye! Delicious

Penne with Spicy Vodka Tomato Cream Sauce

Followed the recipe pretty much as written but i did increase sausage to a full pound. And dont second guess amount of red pepper flakes like I did. The amount in recipe will be plenty! I doubled and it was very spicy!

Hearty Hamburger Soup

I pretty much followed this recipe as is but did not have the tomato soup on hand. I added some other vegetables I had that needed to be used (some leftover corn and a small zucchini I chopped) and it was delicious.
