Turned out more like a biscuit in my estimation. I added some dried cranberries and orange zest but they were very fluffy (probably due to two TBSP of baking powder). I think a scone is denser than what this turned out to be. Probably won't make these again.

Creamy Broccoli Soup

For as simple as this is, it is suprisingly good. Only change I made was to use fat free half and half instead of milk. Didn't use the oregano, just salt and pepper.

Boardwalk Quality Maple Walnut Fudge

This just didn't have the maple flavor I was anticipating. I used Mapleine brand maple flavoring which is the extract I use to make my pancake syrup. Even added more. I was a little disappointed. It was very simple and creamy; I can see where I would use this with other flavors of chips and get a good outcome.

Love, love, love this salad. It is so different. The raisins are a must. Sounds weird, I know but make it to the recipe and you will be surprised how great it is

Ricotta Cookies II

I can understand how people may have problems with this cookie dough but it was a lovely light cake-like cookie. I definitely would not have been able to do it without a scoop, would have had to add more flour. We did add more conf sugar to the glaze. Otherwise followed recipe to the letter. The dough IS soft!

Sarah's Applesauce

I have made applesauce this way all my life, its a no-brainer! Probably would use a little less water, just enough to keep it from sticking to the pan. Now we use Splenda instead of sugar for a zero point Weight Watcher fruit.

Pink Cloud

I had to do this "low cal" for our WW diet but it is still wonderful. Used sugar free Cool Whip and Jell-o, 1% cottage cheese. Didn't have any pineapple in my pantry so I used mixed fruit and a small can of oranges. This used to be my mother's favorite so my daughter calls it "grandma's fluffy stuff".

Easy Batter Fruit Cobbler

Sometimes the simplest recipes are the best...and this is no exception. Used fresh GA peaches and threw in a few blueberries and it was delicious. Made no changes. Perfect.

Blueberry Pie

So glad we didn't use the recipe with twice the sugar. This was perfect. We used blueberries we picked here in Central Florida and they made an absolutely delicious pie!

Chicken Souiza Cornbread Bake

Very good! I too was skeptical but this is excellent! I used fat free cream of chkn soup & about a 1/2 c. of sour cream...I use liquid eggs almost 100% of the time anyway so no change there. When I get a rotisserie chicken and have leftovers I always freeze them and that is what I used for this casserole....about three bag's worth!

Chicken Breasts in Caper Cream Sauce

Very good...was salty but that was my fault for not rinsing the capers. Would have liked the sauce a little thicker, but I used fat free 1/2 & 1/2 so maybe that was the problem....

Kielbasa with Brussels Sprouts in Mustard Cream Sauce

I rated 5 stars but admit I did not exactly "follow directions". I just sauteed a chopped onion and about a Tbsp of refrigerated garlic (no time for this roasting garlic stuff....). Then I added diced kielbasa and sauteed until crispy (I used turkey kielbasa). Then I added the cream (fat free half and half, lol) mixed with dijon mustard and brought to a simmer, scraping the pan crispies off. I had steamed the brussels sprouts, so then I added them. At that point I thought we needed something to serve it over so I boiled a half box of fettucini...which ultimately we ended up mixing into the sauce and serving the whole thing in bowls. Added some more salt and pepper and viola! Excellent. Same ingredients...different execution! oh, p.s. I did not use the beans!

Strawberry Cobbler I

I cut the berries in half b/c they were so huge (fresh from the field in Plant City). Used Splenda in the sauce and about 5 c. of berries. I was afraid that I didn't have enough dough to cover, but it raised up really nicely to cover the berries. Very good! A nice change from shortcake.
