About this Cook
Retired administrative assistant in a neurologist's office. Married for 38 years and have a 29 yo daughter who is back at home. We have lived in Florida for nearly 34 years. My husband works for a national wholesale foodservice company so it is fun to have him in the kitchen with me.
My favorite things to cook
I'm pretty adventurous...can't say that I have one favorite thing. Nothing like comfort food....a good roast or meatloaf. Not heavily into BBQ or Chinese!
My favorite family cooking traditions
My father was born in Copenhagen, Denmark, so I try to keep those Scandinavian traditions alive. Red cabbage, frikadilla, pork roast. Danish cookies (kleiner)
My cooking triumphs
Our annual Christmas party for about 40 people when we cook all the food (appetizers, salads, meat, cookies, desserts) ourselves. Not to mention favors, drinks etc.
My cooking tragedies
hmmm.....they must be WAaaaY back in my memory bank.

How to Make Tres Leches Cake
I got so many compliments on this cake. It would have been even better with "real" whipped cream but after the "tres leches" I couldn't bring myself to do more than whipped topping. I did use a white cake mix. I really questioned the amount of liquid I was pouring on the cake but after sitting overnight it had absorbed all of it. Yummy!

Amish White Bread
This made two beautiful loaves. Very dense, though. Makes great toast but not light enough for a sandwich.

Slow-Cooker Corned Beef and Cabbage
One of the best I've made. I usually cook on the stove but had things to do. I do use half apple juice and half water to cover and started on high for four hours, then switched to low. Added some extra pickling spices.
