About this Cook
Retired administrative assistant in a neurologist's office. Married for 38 years and have a 29 yo daughter who is back at home. We have lived in Florida for nearly 34 years. My husband works for a national wholesale foodservice company so it is fun to have him in the kitchen with me.
My favorite things to cook
I'm pretty adventurous...can't say that I have one favorite thing. Nothing like comfort food....a good roast or meatloaf. Not heavily into BBQ or Chinese!
My favorite family cooking traditions
My father was born in Copenhagen, Denmark, so I try to keep those Scandinavian traditions alive. Red cabbage, frikadilla, pork roast. Danish cookies (kleiner)
My cooking triumphs
Our annual Christmas party for about 40 people when we cook all the food (appetizers, salads, meat, cookies, desserts) ourselves. Not to mention favors, drinks etc.
My cooking tragedies
hmmm.....they must be WAaaaY back in my memory bank.

Rhubarb Strawberry Crunch
Half of the topping recipe was plenty as this fit in a 10x7 pan. Had made previously with full amount and felt like we were eating more topping than fruit. As well, since my daughter is GF the GF flour can get too gritty in large amounts.

Mom's Zucchini Bread
Excellent! I did use half oil & half applesauce and a cup each of white and brown sugar. Probably closer to 3 c of zucchini--1 large one.

Onion Jam
Wow! Delicious. I think I would prefer thinly sliced (&perhaps halved) onions next time. My sugar seized even before I got the onions into the pan but thankfully I read reviews stating that this would melt back out. Mine is very thick--perhaps I overlooked but flavor is great. Next time I'm going to try balsamic vinegar.
