Coconut Curry Pumpkin Soup

Excellent! The light coconut milk is exactly what my recipe was missing. I used olive oil and chicken broth, and added some ginger and tumeric to spice it up a bit. This is my go-to lunch throughout the winter.

Pork Lo Mein

I made this with red and green bell peppers, onion, peas, and kohlrabi (which adds a nice crunch, rather like water chestnuts), and leftover roast pork. I doubled the sauce, as I had a lot of veggies, and served it over boiled Japanese udon noodles. Perfect!

Mango Salsa

Fantastic! We have this with grilled or pan-fried fish, and it turns a plain meal into a favourite! I omit the jalapeno, and replace the cilantro with basil, just to suit personal preferences.

Grandma Johnson's Scones

Fantastic! I followed the advice of the very first reviewer, as other have, and my scones turned out light, buttery, and delicious. I made one batch of lemon cranberry (add one cup dried cranberry, the juice of one lemon, and a teaspoon of lemon rind); one batch of raisin; and one batch of savoury ham, onion, and cheese (reduce sugar to approx. 1/4 cup, add sauteed diced onions, diced ham, and 1/2 - 1 cup of grated swiss cheese). I baked a dozen, and froze another three dozen for use during the holidays. Thank you for this 5-star recipe!

Red Chard and Caramelized Onions

Fantastic! I started out trying it because I had a surplus of chard in the garden, and knew I should eat some greens; I ended up staring down at my plate and wondering where all the chard went. This is the first cooked chard I have ever truly enjoyed. Thank you!

Chicken Fricassee

A good go-to recipe for chicken. I used chicken broth instead of water, and thickened the gravy with corn starch instead of flour. I expect it would be wonderful over mashed potatoes.

Fluffy Pancakes

Easily the best pancakes I've ever made. The addition of an acid (the vinegar) makes sense, as it reacts with the baking soda to make these pancakes light and fluffy. I added blueberries to half the batter, and these turned out perfectly, too. Thank you!

Blueberry Buckle

Excellent - this is exactly what I was looking for. Served as is, it's a lovely coffee cake; topped with Blueberry Sauce (also from this site), it is a delicious dessert. I used butter instead of shortening, but made no other changes. Thanks for sharing!

Squash Braid

Outstanding! This makes a soft, moist bread that looks lovely and tastes even better. I used acorn squash, which gave the loaf a lovely orange colour and a smooth texture. It does not taste 'squashy' at all, any more than potato bread tastes like potatoes. I made two braids on Saturday, and am making two more on Tuesday. Thank you for sharing this recipe!

Chocolate Cream Pie II

Outstanding! The texture is smooth, the taste is rich, and the pie plate is now empty. I used 4 tablespoons of cornstarch, as recommended by other reviewers, and the filling set up perfectly. This will be my "how to impress dinner guests" dessert from now on.

Awesome Roast Beef

Excellent! I followed the recipe as written, with one modification: I rubbed the roast (upper round) with Montreal steak seasoning before searing it and putting it into the slow cooker. I did not add any veggies - just the soup and broth. I expected it to taste like pot roast, but it ended up a bit closer to roast beef than I had anticipated, but I think this depends entirely on the cut of meat used. The gravy, by the way, is super - just put it on the stovetop and add some corn starch mixed with cold water, and bring it to a boil. Perfect for mashed potatoes, and for hot roast beef sandwiches the next day.

Honey Wheat Sandwich Rolls

My go-to recipe for fresh dinner rolls. I follow the recipe exactly, but I allow the dough to rise twice, and the rolls always turn out very light and airy. I do not roll out the dough - I just divide it into 12 balls, then shape by hand. They freeze beautifully!

Baked Spinach

Excellent, especially if you follow RiverTownMom's notes. I used Swiss chard instead of spinach, and it worked very well. I used feta cheese as well as parmesan, and added some chopped bacon. Lovely! I was going to give away some of the excess chard from my garden, but not any more.

Belle's Hamburger Buns

Excellent - not too heavy, slightly sweet, and a perfect match for a freshly-grilled burger. I made this recipe in my bread machine, using active yeast, and it turned out perfectly. The only change I made was to substitute one cup of whole wheat flour for one cup of the white flour.

To Die For Blueberry Muffins

Excellent! These have become a family favourite, and they are so easy to prepare. I use buttermilk instead of regular milk when I have it, and leave off the topping, as I think the muffins are sweet and delicious enough on their own. Tossing the berries with a bit of flour before adding them to the batter prevents the blue colour from spreading. Thanks for a great recipe!

Black Beans and Rice

Wow - this was much better than I expected it to be. I usually make my rice in a rice cooker, but followed the directions for this recipe and was not disappointed. I served it with fajitas and roasted kernal corn, and it was a hit. In fact, I abandoned my fajitas and just ate beans and rice with some corn stirred in. It was just what I was looking for - thanks!
