Aunt Bert's White Cake

I followed this recipe exactly. I was a little nervous because the batter seemed a bit runny. However, the end result was delicious. Instead of making a cake, I made cupcakes and iced them with "Chocolate Frosting III." I made them for both my husband and I to bring to work, and they were devoured! Everyone raved about them!

My Mom's Chocolate Cake

Amish Meatloaf

I made this for my husband (with a couple of variations). First, I made it with ground turkey since that was what I had in the house. Then, I put 4 slices of bacon on top (because my husband loves bacon). We were a little nervous about the ground turkey, but it was still delicious! I will definately make it again - I'm sure it will be even better with ground beef.

Chocolate Covered Cherries

These were very good, but a little difficult to make. I took the advise of another reviewer and froze the fondant and the cherries. That made the process a lot easier, but it was still time consuming. I also used a fraction of the fondant that the recipe called for. I made three types: semi-sweet chocolate, white chocolate, and cherry-flavored chocolate. I brought them to work for Valentine's Day, and disappeared quickly!

Apricot Brisket

This was great! It was the first time that I made brisket, and I was making it for my family for Passover. I put some additional onion soup mix in the water that surrounded the brisket since a few others said that they would use another packet of onion soup next time. Everyone loved it . . . it went faster than everything else (there were hardly any leftovers)!

Coconut Macaroons III

This was excellent. My family moved from NY to NC, and we could not get good macaroons in NC, so I decided to try this recipe. It was amazing! I made a large batch following the directions. Then, I took most of them and covered them in melted chocolate (with just a little bit of shortening in it), and then refrigerated them. Then, I made another batch with chocolate chips in it. The chocolate covered macaroons were the best, but they were all great. My mother said that she will never buy macaroons again (even in NY)!

Pumpkin Zucchini Bread

Delicious! My husband hates nuts, so I left out the walnuts. I added pumpkin pie spice in addition to the other spices. I also used egg beaters instead of eggs to cut down the fat/calories, but no one could tell the difference. My husband and mother do not normally care for pumpkin. However, they both loved this bread!

Marinara Sauce III

I was surprised when I saw celery and carrot in a marinara sauce, but it came out great! I did make some variations. For the meat lovers coming to dinner, I made as recommended, but added ground beef. For the veggie lovers, I added zucchini, broccoli, yellow squash, and a little red wine. Everyone loved it.

Pumpkin Cream Cheese Muffins

My best friend and I used to work together . . . right across from a Starbucks. We loved getting their Pumpking Cream Cheese Muffins in the fall. When they stopped serving them, I found this recipe and made it right before my friend came over one night. We both loved them. She has since moved to another state and always asks me to make them when she comes to visit! My husband, who grudgingly tried these because he hates pumkin pie, also loves them. I did make a few variations. I make double the cream cheese mixture (and I've never had a problem when the cream cheese touches the paper cup). I leave out the pecans, and I add some pumpkin pie spice. I also substitute canola oil for the olive oil.

Mexican Rice III

This is so good! It has become a family favorite in my home. I serve it with fajitas and black beans. My cousin said that she knew it was good rice because her husband got fourths - he usually eats one serving only of rice!

Favorite Corn Bread

I experimented with this recipe before Thanksgiving, and was not crazy about it - I prefer a sweeter corn bread. For Thanksgiving, I used this recipe as a base, but doubled the sugar, substituted butter flavored shortening for the regular shortening, decreased the milk slightly, and added almost 1/2 a can of cream corn. That gave the bread a wonderful, moist consistency. I also made another batch but boiled craisins in a little sugar water for about 5 minutes (just until they were moist). I then added those to the batter before baking. Both types were a hit on Thanksgiving - especially the batch with the craisins!

Shortbread Cookies II

These were great! I made some plain, and then I made another batch with a twist. I topped the cookies with seedless raspberry preserves, and then froze them. While they were in the freezer, I melted dark chocolate in a double boiler. I then removed the cookies from the freezer and dipped them in the melted chocolate. I set the cookies on wax paper and placed in the refrigerator for the chocolate to harden. They were a hit!

Crazy Chicken Marinade Grilled Chicken

My husband and I both thought that the lime was way to overpowering. I used the marinade on both grilled chicken breasts and steak. I used the meat to top a salad for dinner. We used an avocado ranch dressing which drowned out some of the lime taste. So, overall the salad was very good, but we would not have enjoyed the meat on its own.

Basil Tomato Rolls

I tried this recipe (with a few modifications) last night, & my husband & I loved it! The rolls were moist and flavorful. I read a review that had a hard time getting the dough to rise. I used a tried & true method that I was taught when I 1st started baking bread - it hasn't failed me yet! I combined the yeast & warm water, as well as 1 tsp of the sugar. I let that sit until there was a thick layer of foam on top (about 10 mins). Then, I proceeded with the directions in the recipe. I did add dried parsley & cracked pepper to the dough. I, also, used Unbleached White Whole Wheat Flour. I was making these to accompany a salad with grilled salmon & only had enough tomatoes for the salad, so I used a 12oz can of diced tomatoes for the sauce. I used fresh basil instead of dried & probably a bit more than the recipe called for. Also added parsley and a pinch of sugar. I did not add the additional tomato sauce as the recipe called for. Once I stuffed the rolls with the sauce, I topped with a blend of shredded Italian Cheeses. The results were great! Before this, my husband's favorite bread that I made was sundried tomato pesto bread sticks. Next time, he wants me to try to combine the 2 ideas & kneed the sundried tomato pesto into this dough & make everything else as I wrote above. I'm sure it will be great, too!

Plum Blueberry Upside Down Cake

This was delicious! I made a few revisions....I used salted butter instead of margarine and omitted the salt. I added about 1/2 a package of vanilla instant pudding mix and 1/2 teaspoon of cinnamon to the flour mixture. I used almond extract instead of vanilla. Also, I had to bake about 15 minutes longer than the recipe said, but that may just be my oven. Other than that, I stuck to the recipe, and it turned out perfectly and tasted delicious!
