Pierogi (Polish Dumplings)

Polish Sausage and Pierogy Haluski

This was delicious!!! I made this using the "Pierogi (Polish Dumpling)" recipe on this site intesd of using frozen. Also, I cooked the onion and cabbage for a little bit, then added no sodium beef broth and covered. When the cabbage was done, I put it in a bowl, melted a little butter in the pan and added the kielbasa & pierogies until they got a little carmelization. It was amazing!

Kickin' Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

Absolutely delicious!! The burgers were moist and full of flavor, and the sauce was delicious. I did cook the jalapeños and onions before mixing them into the meat. I didn't have steak seasoning, so I used Paprika, Parsley, and Thyme. I, also, added a slice of Sargento Ultra Thin Cheddar & Swiss to each burger.

Jam Filled Butter Cookies

These are delicious! I did make some changes to the recipe....I slightly reduced the white sugar and added some brown sugar. I, also, used the whole eggs, added vanilla and almond extracts, and added cinnamon to the dough. The dough was not firm enough to roll into balls. I was in a rush, so rather than putting it in the fridge, I used a cookie scoop and then, a small spoon dipped in flour to make the well. It worked perfectly!

Fettuccine with Sweet Pepper-Cayenne Sauce

This was delicious, but I made several modifications. I used a 16 oz package of pasta and added baked chicken, 1/2 an onion and mushrooms, and then doubled the sauce. I used a lot less cayenne pepper than the recipe called for. First, in a saute pan, I melted butter in a little olive oil. Then, I sauteed the peppers and onions until very tender (longer than 5 minutes). I removed them from the pan and put them in a blender, along with some of the chicken broth. I pureed this until it was smooth and added a couple of tbsp of cream. Meanwhile, I added sliced mushrooms to the pan with the garlic. Then, I returned the sauce to the pan, added the sour cream, cayenne pepper, and Parmesan cheese. Because of other reviews saying that the sauce was runny, I added the broth slowly but wound up using all of it. I added the cooked pasta to the sauce and let it simmer for a few minutes to soak up some of the sauce. The result was a creamy, delicious dish!

Fluffy Pancakes

These were so easy and great tasting! I was out of all-purpose flour, so I subbed self-rising. Because of this, I used less than a teaspoon of baking powder. I increased the sugar slightly. I used salted butter instead of shortening, so I, also, omitted the salt. After I mixed the wet and dry ingredients, the batter seemed a little thick, so a added another splash of milk. The final result was light, fluffy, and delicious pancakes!

Cocktail Meatballs

These were very good. I had ground beef in freezer bags in the freezer, so I don't know exactly how much I used, but I'm guessing 2+ pounds. Then, I used 1 bottle of Heinz Chili Sauce and (1) 14 oz can of cranberry sauce. I didn't measure the other ingredients (just eye-balled it), but I could definitely still taste the tartness of the cranberries, more in the aftertaste than the actual bite. I like cranberries, but my husband doesn't (and neither do a lot of our guests). Since everyone likes sweet party meatballs, I tried adding just a little more brown sugar, and it took the tartness away. The other thing that I changed was the cooking time. After cooking in the crockpot on high for 1 hour, the onions in the meatballs still had a slight crunch. I added another 1-1/2 hours to the crockpot, and they came out moist and delicious. There weren't many leftovers, but my husband and I made little sandwiches with Hawaiian bread, and it was great!

Gingerbread Boy Cookies

I was making gingerbread cookies for my class, so I decided to try this recipe (because I've never been a big gingerbread fan, but I like a softer cookie). I did double the spices as others suggested, and I added some nutmeg and cloves. The kids loved them (said I was the best teacher ever), and my husband said that they were by far the best gingerbread cookie he's ever tasted!

Grilled Zucchini Pizza

These were great! I did make a few changes....I didn't feel like starting up the grill for these only, so I lined a baking sheet with foil and put a cooling rack on top of the foil. I dipped the zucchini in the garlic butter (both sides) and laid on top of the cooling rack. Then, I made sure to put the little pieces of garlic on each slice. I put my oven on broil (high) and let them cook for a few minutes and then flipped them. I did not have any tomato sauce in the house, but I did have tomatoes. So, I thinly sliced a tomato and topped each slice of zucchini with one. Then, I returned to the oven for a few minutes. Next, I topped with a turkey pepperoni and then mozzarella cheese and returned to the oven until the cheese go bubbly. It was delicious!

Braised Pork Ragu

I thought this was very good but not amazing. I used boneless pork chops (they were on sale) and only used about 2.25 pounds. I, also, doubled the spices (I used fresh sage and rosemary) and added mushrooms, 2 garlic cloves, an extra carrot and a little extra wine. I did not have a problem with the sauce thickening, but I probably cooked it on a low boil for about an hour. I served over brown rice and it made a fairly healthy, satisfying meal.

Easy Morning Glory Muffins

These were great! I did make a few changes: I used half brown sugar & half white sugar, added a little less than 1/4 tsp of nutmeg, and reduced the baking soda to 1-3/4 tsp and added 1/4 tsp of baking powder. I, also, left out the raisins, coconut and nuts, because I didn't have them in the house. I left the skin on the apple, since it was being grated (most of the nutrients are in the skin). The end result was delicious. Even my husband who doesn't like carrots liked it!

Turkey Breakfast Sausage

This was very good. I did use fresh sage, and probably tripled the amount. I, also, added some maple syrup & crushed red pepper. After seasoning, I let the ground turkey sit in the refrigerator for several hours before cooking. I put a little vegetable oil in the pan and had the temp on med-high, so that the sausage got a little caramelized. It really tasted like sausage. My husband and I were so surprised!

Pasta With Tuna Sauce

I probably tripled most of the spices, added a roasted yellow pepper, fresh basil, salt & pepper. I, also, used fresh tomatoes instead of canned, but I used more than one can's worth of tomatoes. I par cooked a package of whole wheat spaghetti, and then added it, along with approx. 2 cups of the starchy pasta water, to the sauce. I cooked until the pasta absorbed most of the sauce. Before I added more spices, this was very bland and tasted mostly like canned tuna. After, it was ok for a quick & cheap meal, but not great.

Beef Yakitori

This was delicious! I made almost as the recipe stated. My husband and I are not big lemon fans, so I reduced the amount of lemon juice. I did not have green onions, but I added some thinly sliced onions to the marinade. Also, we didn't feel like getting the grill set up for this little amount of meat, so I cooked it in a frying pan. After the meat was cooked (we like our steak medium), I removed the steak & set aside on a plate. Then, I added a little more oil, to the pan, and some already cooked brown rice. Then, I added sweet soy sauce, a little more ginger, sesame seeds and frozen peas. Once the peas were cooked (just a few minutes), I added the steak back to the pan. We had a one pan hit! My husband & I loved it!

Plum Blueberry Upside Down Cake

This was delicious! I made a few revisions....I used salted butter instead of margarine and omitted the salt. I added about 1/2 a package of vanilla instant pudding mix and 1/2 teaspoon of cinnamon to the flour mixture. I used almond extract instead of vanilla. Also, I had to bake about 15 minutes longer than the recipe said, but that may just be my oven. Other than that, I stuck to the recipe, and it turned out perfectly and tasted delicious!

Basil Tomato Rolls

I tried this recipe (with a few modifications) last night, & my husband & I loved it! The rolls were moist and flavorful. I read a review that had a hard time getting the dough to rise. I used a tried & true method that I was taught when I 1st started baking bread - it hasn't failed me yet! I combined the yeast & warm water, as well as 1 tsp of the sugar. I let that sit until there was a thick layer of foam on top (about 10 mins). Then, I proceeded with the directions in the recipe. I did add dried parsley & cracked pepper to the dough. I, also, used Unbleached White Whole Wheat Flour. I was making these to accompany a salad with grilled salmon & only had enough tomatoes for the salad, so I used a 12oz can of diced tomatoes for the sauce. I used fresh basil instead of dried & probably a bit more than the recipe called for. Also added parsley and a pinch of sugar. I did not add the additional tomato sauce as the recipe called for. Once I stuffed the rolls with the sauce, I topped with a blend of shredded Italian Cheeses. The results were great! Before this, my husband's favorite bread that I made was sundried tomato pesto bread sticks. Next time, he wants me to try to combine the 2 ideas & kneed the sundried tomato pesto into this dough & make everything else as I wrote above. I'm sure it will be great, too!

Crazy Chicken Marinade Grilled Chicken

My husband and I both thought that the lime was way to overpowering. I used the marinade on both grilled chicken breasts and steak. I used the meat to top a salad for dinner. We used an avocado ranch dressing which drowned out some of the lime taste. So, overall the salad was very good, but we would not have enjoyed the meat on its own.

Shortbread Cookies II

These were great! I made some plain, and then I made another batch with a twist. I topped the cookies with seedless raspberry preserves, and then froze them. While they were in the freezer, I melted dark chocolate in a double boiler. I then removed the cookies from the freezer and dipped them in the melted chocolate. I set the cookies on wax paper and placed in the refrigerator for the chocolate to harden. They were a hit!
