Jimmy Dean Southwestern Sausage Tarts

I made these the night before as another reader suggested and cooked them the next morning to bring to the office. They were gone in minutes and everyone raved about them. However, I made 22 with 2 piecrusts and I have leftover filling - I think the recipe will make around 30 or so.

My Chicken Milano

Thought this was good and easy! Used canned green beans instead of frozen, and added some white wine as another reviewer suggested. Also cut the chicken breasts into smaller pieces and served over white rice. The red pepper flakes added a nice kick-this would probably be bland without them. Great gluten-free recipe!

Layered Chicken and Black Bean Enchilada Casserole

I prepared this the night before and cooked the next day for an office luncheon. Excellent with rave reviews from my co-workers! The only change I made was to use green enchilada sauce instead of the red.

Spinach and Leek White Bean Soup

This was fair...however, I used onions instead of leeks, added mushrooms, and did not use the couscous (wheat allergy), so I guess I can't really give it a true rating.

Oven Barbecued Beef Brisket II

This was great! Like other viewers, I didn't have chili sauce so I used bbq sauce. Cooked in my crockpot on low for 10-1/2 hrs. Very flavorful (I used a spicy bbq sauce).

Easy Shepherd's Pie with Garlic Romano Potatoes

This was GREAT! The only changes I made was to use a can of corn and a can of peas, and used cheddar cheese since that was what I had on hand. Split into two 8 x 8 pans (only cooking for 2) and froze the extra pan. Highly recommend!
