Ghirardelli Crispy Crunchy Chocolate Chip Cookies

These are very delicious & crispy!! But they're also greasy because of the butter to flour ratio...which is what makes them crispy I guess! Or maybe it's the length of time they bake...? I'll try baking my regular chocolate chip cookies longer next time to see if they also get crispy.

Slow Cooker Carnitas

This was incredible!! Made it with a pork loin roast & it just fell apart in the crockpot!! Flavorful & delicious! I did double the spices & instead of garlic powder I used fresh garlic cloves (minced). YUMMY!!

Chicken and Gnocchi Soup

Wow! Unexpectedly delicious! Just looking at the ingredients I wasn't sure how this would turn out. But read the reviews & decided to give it a shot. So glad I did! I wanted to make it easier so cooked three 4oz chicken breasts in a dutch oven with the onions, garlic & celery. After the chicken was browned on both sides, I chopped it into bite size pieces & added the broth. Salt, pepper, a bit of onion powder & a sprinkle of poultry seasoning. Added the gnocchi & let it cook then added the fat free half & half. Boom! Deliciousness! 15 y/o son had 2 big bowls. Oh but I forgot the spinach :( Oh well next time!

Pasta e Fagioli a la Chez Ivano

This was delicious! It made the whole house smell yummy! I didn't have celery (& my fam isn't a big fan of it anyways) so I subbed red bell peppers (didn't have green). I also added cayenne powder to give it a little kick :)

Sinigang na Baka

Tasted just like my Filipino mother in law's! I loved it! I didn't add the broccoli, green beans or tomatoes. I also did not saute in oil. I just added the onions, garlic & Knorr Tamarind Soup packet to the water. Brought that to a boil then added the beef & bok choy. Delicous. But it does make a TON so I'll be eating this for days. Unless I freeze some of it.

Shrimp Provencal

I altered it slightly to our taste. I used garlic & onion tomatoes & petite tomatoes, a whole can of tomato paste & a can of tomato sauce. Didn't have fennel so instead I used italian seasoning. Make sure to use plenty of garlic & don't leave out the white wine. The white wine made a huge difference when I finally added it (almost forgot!). I also added fresh spinach during the last 5 minutes. Served it over thin spaghetti. This is so versatile & modifiable!

Cinnamon Coffee Cake II

Delicious & moist! I only had one box of jello (sugar free cheesecake) & that worked fine. I used 1/2 unsweetened applesauce & 1/2 oil. The batter was thick so it was a bit tricky layering the top half over the brown sugar mixture. I let the batter drop from my spatula then carefully connected the drops until the entire top was covered. Also, I used a 9x13 pan & only baked for 20 minutes after turning the heat down; so a total of 40 minutes.

Seafood Chowder

This was soooooooo incredibly delicious!! My 15 y/o son had 3 bowls & my husband had 2! I added a jar of clam juice, few sprinkles of fish sauce & one small chopped onion. I also added the juice from the can of clams. YUM!! Might have to double it next time, as there's only about 1 bowl left now!

Layered Chicken and Black Bean Enchilada Casserole

This was a hiit with my husband & teenage son. I did not toast the tortillas & it was just fine. I did add onions, garlic & chili powder. I also shredded the chicken instead of dicing them. We topped it with chopped lettuce & sour cream. Delicious!

Basic Crepes

Wow! Why did I wait so long to make these?? Delicious & best of all super easy! I did what other reviewers suggested...mixed the wet first then stirred in the flour. Came out lump free. For a filling I mixed cream cheese, sugar (to taste) & frozen strawberries. Yum! I'm going to try Nutella next time. My husband & teenage son both gobbled these up.

Red Velvet Cupcakes

This was my first shot at Red Velvet & they turned out awesome! The recipe was very easy. Cupcakes came out super delicious & moist. The only thing I did differently was add almond extract & a little butter extract. I also did mini cupcakes (made 96!!!) & only baked for 16 minutes. The frosting was delicious as well. This is a definite keeper!

Used Rolos instead & LOVE them! One thing tho, make sure not to leave them in the oven too long or they'll spread. I took mine out after 2 minutes & it was almost too long.
