Roasted Rack of Lamb

I'm addicted to this recipe! I've made it without the bread crumbs, and it's still super tasty! I've stopped measuring the dijon and just use the amount needed to cover the entire rack (usually more than 1 tbl). I have never been able to bake it for only 12-18 min, usually needs around 25-30 min for me to get medium-rare, and meat thermometers are awesome!!!

Roasted Yam and Kale Salad

Linda's Lasagna

As many before me, I substituted ricotta for the cottage cheese, and used no boil lasagna. Pretty good recipe, but the sauce was too sweet - I'll be tasting the sauce before adding sugar next time.

Kale Salad

I used dino kale, and massaged it thoroughly. Didn't have sunflower seeds so substituted with pine nuts. Overall, the salad was a hit! Will probably make less dressing next time since we really had to drain the salad when dishing it out (but maybe the tomatoes contributed some fluid).

Asian Lettuce Wraps

I made this for a friend's birthday and it was soooo delicious! It took me a long time to prepare so maybe I'll get a food processor? There was no butter/bibb lettuce at the two grocery stores I went to so I bought red leaf lettuce - worked great! It was a little sweet for my taste, so I plan on using less seafood (hoisin) sauce next time. Can't wait to make it again!

Turkey Cabbage Rolls

Now I remember why I haven't made this in 7 yrs -unless you're using Savoy cabbage leaves, you will be SOOOO frustrated (do you peel the leaves of cabbage off first, ripping them to pieces? or do you steam the whole head of cabbage, which actually takes an hour?!) -2 tbl filling/leaf will leave you with lots of leftover filling, try 3 tbl and you'll still need more than 16 leaves -the sauce is too sweet. Next time I'm going to see what it tastes like before adding the brown sugar. Now that I've typed this all out to share with you, I should remember for next time!
