No Fry Crab Rangoon

I made this with a gluten free wrapper. The filling totally tasted great. I did add scallions in addition to some chopped onions, a dash of lemon juice, a dash of pepper, and I backed off on some of the garlic. I also used fat free sour cream and fat free cream cheese. This was amazing! Tomorrow I'm going to make it with parmesean cheese and spinach as a crab dip. YUM!

Gluten Free Best Brownies

WOW!!! I made these using gluten free flours instead of all-purpose flour and they turned out REALLY well. Like all things gluten free I had a hard time getting them to cook in the center, but it was so worth the extra cooking time. My only complaint was the frosting, which was unmodified from the original recipe. I had to roll it out in my hands and put it on piece by piece. It was kind of a pain. Still, it had a great flavor. All in all, these were great brownies. The only thing missing was the chewy edges. I will definitely make this recipe again.

Gluten Free Fluffy Pancakes

These pancakes are awesome! I had to make a ton of substitutions due to food allergies. I used rice flour/potato starch/xantham gum in place of the flour, Vance's Dari-free for the milk, rice vinegar in place of white vinegar, and palm shortening in place of the butter. These are by far the best pancakes I've made in 6 years since I went gluten free.

Emily's Famous Marshmallows

We used brown rice syrup instead of corn syrup because we have a little one with a corn allergy. She's never had marshmallows before. They turned out FABULOUS!!! Texture and taste was perfect, almost exactly like store bought Peeps. YUM!!! Thanks!!!

Cheddar Ranch Dip

This is an amazingly versatile recipe. I use fresh bacon and fat free cheddar and sour cream. I also make my own ranch dressing mix due to food allergies in the family. My whole family LOVES this dip!

No-Guilt Zesty Ranch Dip

My husband has high blood pressure and high cholesterol. I make this with fat free everything (including fat free mayo) and I omit the salt and add additional garlic and black pepper. It is absolutely amazing and he loves being able to have a yummy snack again without the guilt. YAY!!!

Awesome Egg Rolls

I haven't been able to have egg rolls for 6 years due to a gluten (wheat) intolerance. I made these last night as a treat to myself. I used rice papers instead of egg roll wrappers and I baked them instead of frying them. They tasted almost exactly like the real thing. YAY!!! Thanks so much for the awesome recipe.

Flourless Peanut Butter Cookies

This recipe is a standard at our house. My kids have dairy/nut/wheat/corn allergies so we use sunflower seed butter instead of peanut butter. They taste amazing!!! I can't even tell they're not peanut butter!

Vegan Pancakes

This recipe was sooo good. We adapted it to make them gluten free (3/4 cup white rice, 2 cup potato starch, 1 tsp xantham gum) and I subbed brown sugar for the white sugar, added cinnamon (for color), and a bit of vanilla. We loved them! Will definitely make again! Thanks!!!

Scallop Scampi

This is a fantastic scampi recipe and works well with baby shrimp as well as bay scallops. I would definitely reduce the amount of salt significantly though. The first time I halved the salt and it was wonderful. The second time I forgot to halve the salt and it was so salty I almost couldn't eat it.

Sally's Spinach Mashed Potatoes

These were amazing! I used instant potatoes and it was still wonderful and it shaved a ton of time off of the recipe. I will definitely be making this again. Be sure if you use instant potatoes that you follow the box directions and then don't add the salt, milk, or butter that the recipe calls for.

Ultimate Grilled Steak

I did not care for this steak AT ALL. I'm a steak lover and I couldn't even finish mine. The A1 was completely overpowering and made the steak taste cheap and family diner-ish. I will not be making this again.

Salsa Chicken

WOW!!! I dredged the chicken pieces through the taco seasoning and then, after baking, topped with dollops of sour cream. It was very good. I served it over rice (minute rice, the rest of the bag of taco seasoning, can of diced tomato, green pepper, and onion) and mixed in some sweet corn. It was excellent and my husband asked me to make it again the next night for dinner!

Apple Butter Pie

This is probably the best pie I've ever had! It combines apple flavor, cinnamon, and a custard-like texture... All of my favorite things in one pie. Its awesome served with whipped cream on top.

Skillet Corn Bread

This recipe is awesome! There's no better way to put it. I added some sugar because my family likes sweet corn bread. It turned out moist and delicious. I wouldn't change a thing on this recipe other than adding sugar, and I'm a tinker-er. :)
