I am retired after many years working in the utility business. Although I love to cook, I never had the time. I now enjoy my retirement browsing and finding enticing recipes to try on my family.
My favorite things to cook
I love to try new main meals as well as vegetable sides. I also like to try new ideas for casseroles and crock pot cooking. Since I come from an Irish background, I like to experiment with "irish" recipes.
My favorite family cooking traditions
Our family was always a meat and potatoes bunch which really has no real traditions except the usual holiday meals of turkey and ham and cornbeef and cabbage for St. Patrick's Day.
My cooking triumphs
I love making chili and each time I make it, I try adding something different. It is getting better with each new batch. I also love to try experimenting with different spices.
My cooking tragedies
I don't like to remember those so I really can't share them with you. However, the next time I have one I will be sure to post it here.

Rosemary and Peppercorn Chicken
Way too much pepper for 2 chicken breasts. However, the cream sauce saved the day after I scrapped off most of the pepper before serving the chicken. The next time I make this dish (and I will make it again) I will only use 3 T of the pepper. Other than that this was recipe was rated "Good" by the man of the house!

Apple Cider Sauce and Pork Loin Chops
I found this recipe to be Very Bland. I followed all the directions except I sliced a Granny apple and a small onion and stir fried them in the same pan as the pork and followed with the rest of the ingredients but it didn't seem to have the flavor I expected. I will not be making this again.

Chef John's Prison-Style Meatloaf
This recipe was easy to make and a great variation of the typical meatloaf dish. I used Panko bread crumbs. Although you need to add a little more than the recipe calls for because of the texture of these crumbs. I also used Barilla Tomato & Basil sauce. Great the next day too!
