Melt In Your Mouth Pumpkin Bread

SO DELISH! It's a cross between cake, brownies, and bread. I couldn't taste the pumpkin, but probably because I used chocolate pudding instead of coconut since that's all I had on hand. I will make this over and over again...

Stuffed Cabbage Rolls

I grew up making this with ground beef, but since we had ground deer meat on hand we used that instead. It was more healthy and a bit sweet from the deer meat. This is now a house favorite. Oh, after reading reviews on the cabbage, I decided to just nuke each head for a few minutes until it was tender enough to remove the leaves with ease after coring it. That was the best time saving tip ever for this recipe! Thank you!

Chuck's Favorite Mac and Cheese

Minus out most or all of the bread crumbs and this is a winner! It surprisingly tastes really good with the inclusion of sour cream and cottage cheese. The bread crumbs ruined it in my opinion; It tasted like eating breaded mac n chz - ick! If I altered this recipe in any fashion I would just add some red bell pepper and mushrooms.

White Cheese Chicken Lasagna

WOW! I didn't know I had it in me to make such an excellent sauce from scratch. Everything about this recipe came out perfect: perfect presentation, perfect taste, and most importantly it was perfectly appreciated by everyone. I almost substituted swiss chard instead of the spinach, but used fresh spinach, oregano, basil, and parsley. I also threw in fresh mushrooms and wished I'd thrown in some red bell pepper, too. Next time. There will be MANY, MANY NEXT TIMES!

Cheeseburger Meatloaf

I thought this was a fun twist to the typical meatloaf recipe, but gave it 4 stars since I had to come up a creative rolling technique and also thought the recipe could use a cheese sauce to top it since most of the cheese oozed out regardless that I sealed it well. My brilliant rolling technique is to use an asian bamboo sushi wrap to roll it up. It worked really well! Be sure to cover the entire bamboo with syran wrap so you don't ruin your bamboo before rolling. Spread the beefmix on the entire bamboo area, flat and even. Spread the cheese on top and roll. Enclose the ends when finished rolling. To drain, I put a cooling rack over a serving platter and covered it to keep it warm before cutting. Next time I will make this with mozzarella cheese, ground turkey, rosemary, and italian sausage & spices served with pasta and tomato sauce. There are many ways this recipe can be modified, but the basic concept is a great idea! Thanks for sharing...

4H Banana Bread

Nice recipe. Everyone liked it. I even forgot to put the 5T of milk in it and it was STILL MOIST! ha. I did use 3/4c brown sugar instead of the 1c white sugar. I also added 1t vanilla, 1/2t nutmeg, 1t cinnamon, 1/2c fresh blueberries, and 1/2c pecans! Yum! Covering immediately after taking it out of the oven with tin foil to let it steam is so brilliant and surely works by the way... kudos to the person who gave that as an initial tip.

Banana Peanut Butter Bread

I seriously feel like a pro baker now! This was so well-liked by everyone who tried it, which is awesome because I have never been known to bake well. The mods I did to this were to use 3/4c pb, 1 3/4c flour, and 1/2c ButTeRsCoTcH cHipS! Mmmm, right!? Oh, I also added a hand full of crushed pecans! So delish and like I said taken really well by everyone who had it!!

Portobello Mushroom Pasta

I rated this a 4 star only because I felt a few mods were necessary. I added fresh rosemary from the garden, onion, and put it all atop spinach fettuccine pasta. Was very colorful with the yellow zucchini, too. I will make this often from now on!

Spaghetti Squash I

This was my first time making this type of squash and for the most part it was delicious. However, the squash itself is pretty bland so I recommend adding your own zest of your favorite flavors! The best part about this dish is that it is very filling and healthy. I will continue to experiment with the different ingredients to compliment this fun noodle replacement.

I was very skeptical as to whether or not this recipe was going to be impressive for my Valentine... and it was! I actually did about 5 layers high and on top of the icing, I decorated it with edible sparkling red glitter gel.
