Cinnamon Raisin Bread I

Few... thats a lot of dough! I used my KA mixer, and everything went in smoothly. I did notice that the dough was very sticky -hard to really 'knead'. Im going to make it again, but next time i will make these adjustments: a bit more raisins, 1 cup white sugar, 3 tablespoons ground cinnamon (and a little cinnamon in the dough itself). Also 45 minutes was way too long... i actually put it in for 29 minutes and it was perfectly light brown.

Yummy Honey Chicken Kabobs

These were very very good. However i found them a bit too sweet at times. I also added a bit of hot sauce to cut the sweetness. Furthermore i used Not just red peppers, but also green and yellow peppers, zucchini, pineapple (which aids in tenderizing as well). After 7 hours of marinating, it was too long. Next time i will do them for 5 hours. They also work well placed with the kabob in a pan and consistently basted with remaining sauce-very good to caramelize the sauce for a more intense flavor :)

Classic Macaroni Salad

I added less than half of the sugar which was recommended and it turned out great. If i had added all of the sugar to the dressing it would of been WAY to sweet. I cant even imagine... Later i also mixed in some cubed cheesy bratwurst, cracked mixed pepercorns, finely chopped cauliflower and a handfull of cheddar cheese. I topped it off with a couple tablespoons chopped hot peppers. It was very good :)

Chocolate-Filled Cream Puffs

Great recipe. Although i did change a few things as 6 these would of been huge! so i made 12 instead. 12 is also a great number for baking... 1 for me, 2 for my boyfriend, 1 for his friend (who i swear lives on our couch) and then i still have some left over for company in a few hours. lol. Because i reduced the size i baked them at 400 for only 12 minutes, then reduced it to 300 for 25 minutes. And just because i dont like melting and mixing chocolate, u just melted some 'Nestle milk choc' morsels in the micwav and drizzled it over the top instead of mixing unsweetened with sugar... and adding water? that cant be right i would think it would be grainy or clumpy. But great recipe, i will use the batter recipe over and over for making small snack when entertaining and try filling them with all sorts of savory and sweet ingredients.

Baked Miniature Pumpkins

Such a treasure. I purchased quite a few little pumkins from the farmers market and followed the directions. Then i made mashed Yams ad added a bit of brown sugar, buter, milk and spices. I filled the pumpkins with this and topped it with marshmellows. I placed in back in the oven under the broiler (to brown and melt marshmellows) and served them with the lids half-on. A real hit, i will make this again anytime!

Very good. For an added twist i serve with an array of fruit juices so guests can 'make there own' but be aware that this can get you tipsy super fast when you cant even taste the liquor!

Bacon Wrapped Pineapple

Very, very good, and oh so easy. I was looking for a recipe to use up the last bit f fresh pineapple i had, it worked perfect. Although i would not think that it would turn out as well with canned pineapple, fresh is a must! but great fun snack to go with anything

Mini Cheesecakes I

This was exactly what i was looking for. I didnt have any cracker type things on hand so i used crushed Honey bunches of oats added a bit of sugar. I made the recipe smaller, used fat free cream cheese, and changed the topping to strawberries (mixed with a touch of honey) with a dot of whipped cream. Perfect!

Strawberry Pie II

Loved the recipe (as i did not have gelatin on hand). I had just gotten back from the farmers market where i got a great deal on strawberries. I have to give it 4 out of 5 because i did change a few things. Instead of 1 cup of sugar, i used 1/2 cup splenda, and 1/4 cup sugar to reduce sweetness. Then i added only 1/2 cup water, with 2-3 tablespoon cream- this gave it a creamier consistency. I also adjusted the strawberry ratio... i used 3/4 (cut in half) and 1/4 mashed. (instead of 1/2 mashed and 1/2 whole) I also used a pre-made pie crust left over from making tarts a couple nights before, and sprinkled very lightly with nutmeg.... so simple and easy. I will be making it again!

Crunchy Chicken Casserole

Very good and creamy, but i did use miracle whip light instead on mayo, and added in about a tablespoon and a half of chili garlic sauce. I didnt really serve it as a casserole, i waited for it to cool a bit,, placed it in a sandwich with some pepper jack cheese. Great for a weekend lunch! side it with some bbq chips, yum

Applesauce Drop Doughnuts

Very good. Little bit on the dense side. But i made them for a few of my boyfriends friends in the deep fryer as a late night video game snack. They loved them, but they would have liked them to be sweeter, and mentioned the same that i did about the density.

Hot Mustard Popcorn

Very tasty, easy to make on short notice. Even those who do not like mustard can appreciate the wonderful flavor...( just dont tell them they are eating it), lol. I changed the recipe a bit tho. It was a little too much tyme for me, so i added a little more spice with red pepper and paprika. Then added a tablespoon of dried cheese mixture (i use the cheese from kraft mac and cheese, it easily coats the popcorn). And it was a huge it.

Red Skinned Potato Salad

Very good salad, but i did reduce the amount of onion, and replaced some of the onion with green onion. I then added a bit of garlic, and a bit of sour cream in replacement of some mayo... maybe a 1/4 cup. I then reduced the bacon a bit and added shredded mexican 4 cheese blend, very good, huge hit!

Nana's Apple Crisp

I have a boyfriend who wants his apple crisp, sweet but not too sweet, crunchy but also soft. I tried this recipe, and tada! he LOVED it and i did as well. I would increase the recipe a bit so it is not so thin in the pan, but that is it.
