Green Grog

This was so easy to make and perfect for our annual Halloween party. I froze pink lemonade in a spider-shaped tray and served it in a witches cauldron with the pink spider in the green punch. Delicious! I did use diet lemon-lime beverage and this did not detract from the flavor. Fair warning: the alcohol is not noticeable in this!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

These are pretty good. I made them a little extra healthy by using agave & molasses in place of brown sugar and topped them with sliced almonds. They are tasty but probably not as sweet as the original recipe.

Apple Dumplings

I have made this three times now and I am a huge fan. I made it the first time around the holidays and it was like Christmas in a roll. I used granny smith apples. Word of caution though: green apples are often smaller than red apples and too small apples means too little filling. I did use Jr. biscuits for my smaller green apples and this worked out well.

Cream of Cauliflower and Stilton Soup

I wanted to give my version of this 3 1/2 stars but didn't have option. My husband says give it an 80/100 :) I used extra fingerling potatos, no leek, milk instead of cream, and danish bleu cheese. I also served with crusty bread. It was good but I thought leftovers became a bit tough to eat. Its a potent taste (probably the less smooth bleu cheese) and great in small batches.

Serious Herb Cheese Spread

Four stars because it is so simple and can be elegant or football food the next day. I followed the recipe except I used dried dill weed and herbed kalamata olives. I also garnished with olives and parsley. I think the mustard goes a long way...in a good way. It would be interesting to add some spice like crushed red peppers or cayenne for an extra surprise.

Spinach Lasagna III

I used the NO BOIL lasagna noodles. Don't know if that dried out my pasta or what, but I would maybe use more sauce next time. I made an extra to take for a friend. He raved, but he always does :).

Baked Delicata Squash with Lime Butter

Cindy's Turkey Salad

This was great. It was a great way to use up leftover holiday bird. I used half mayo and half lowfat sour cream. This gave it a deli flavor. Next time, I will double the amount of jalepeno, too.

Middle Eastern Rice with Black Beans and Chickpeas

I made the vegetarian version of this and thought that it was wonderful. It was a great quick and healthy meal. The coolness of the cold cucubmer & tomato salad that I served with it was a nice compliment to the rice and beans.

Coconut Orange Cupcakes

I made this recipe for an event at work. The cupcakes came out wonderfully. They were a perfect light dessert aside the rich brownies, etc. I used organic coconut (it's much more moist and I think it has a better flavor). I also did not add the coconut topping until right after I pulled them out of the oven. Will most def. make these again!

I'm not sure if I didn't go something correctly, but I wasn't crazy about this flavor. It was a little bitter and maybe just too acidic from the tomatoes for my tastes. I probably won't make again.

Chicken Noodle Stir-Fry

I was not in love with the flavors of this dish. As other reviewers stated, it was a bit salty for my liking. In an attempt to add more/different flavor, I mixed in garlic pepper paste. This gave it a zing but I still wasn't thrilled to reheat the leftovers the next day. Three stars for bein' easy!

Seven Layer Tortilla Pie

I thought this was great. It was really simple. I added a layer of ground turkey b/c the boyfriend requested "something with meat". I also made fresh guacamole to serve along side. This was especially good reheated for lunch the next day.

Authentic Thai Coconut Soup

I think that this recipe is great. I rated it at a five b/c I think it would have been a five if I hadn't tried to be a bit healthier and use lite cocount milk. It was a little bland, but with full flavor milk, it would have been dreamy! I also replaced the shrimp with tofu when I served it. very tasty.

Best Beef Stroganoff

I may not have made it correctly, but my sauce was a bit too watery (and yes, I did use consomme). I also thought it wasn't as flavorful as I hoped so I added a tiny amount of mustard and some peppers. It was alright. I just may not be a Stroganoff kind of gal. PS- pay attention to the number of servings, I didn't and ended up eating this mediocre dish for days!

Lime-Glazed Pork Chops

This was sweet, tangy, and spicey at the same time! It was an excellent variation to a typical porkchop. I left the seeds in the Jalepenos for a little extra spice and it was superb! Will definitely make again for begging boyfriend.
