Amy's Spicy Beans and Rice

This is a great recipe. I did make some additions that I think just added to it. I sauteed some chopped onion and garlic and added to the beans along with the other ingredients. Also added cheese,green onion, olives, cilantro, shredded lettuce and sour cream on top but did not put it back in the oven just left it "fresh". Serve with some tortilla chips to scoop...Yummy!

Tuna Dip I

I'm sorry, I just really didn't like this. As far as I am concerned it was a waste of a can of tuna!Even the sweet pickles did'nt make it edible.

California Grilled Veggie Sandwich

I did'nt grill the veggies but did them in the oven. It was just to dark to see the grill. So I can't imagine how good they would be grilled. I don't think it matters what veggies you use this sandwich is awewsome! I used a garlic/herb foccacia bread. Wow! But make sure you use a good bread it can make or break the whole sandwich.Even my husband who needs meat on his sandwich LOVED these.

Italian Veggie Rolls

These are the best! I suggest if you are using jarred sauce make sure it's a good one. Our meat eating cousin was over the night I made these and he went home and raved to his wife how great they were! The only deveation I made was to add one jar of Prego to my homemade sauce so I would have enough. Which I actually had too much. But with a salad you have a great meal!

Greek Potato Stew

This was very good. Although if you start with raw potatoes it takes ALOT longer than 30mins. But I think that the raw potatoes obsorb alot of flavor because it does take long. I also had to use a whole 28oz can of tomatoes as the potatoes started to dry out and stick. Also doubled the garlic and added Feta cheese as suggested. Big plus! Kalamata olives a MUST, don't even bother with regular black olives as the flavor is not the same. After all that did'nt need to add any salt as we usually don't anyways to our food. Give it a shot but might need to play with it a bit.

Denise's Peanut Chicken

I made this recipe the other night and made it exactly as it read with the exception of adding more vegetables. It was good but not great. I found it to be a little bland tasting, something seemed to be missing.I read the other reviews that added peanut butter but to me that's not really rating the recipe for what it is if you change the ingredients. I don't think I'll be making this again.
